Ingredients
Base and Batter
- 1 stick salted butter, cubed
- 1 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup whole milk
- 1 cup brown sugar
- 2 tablespoons molasses
- 1 tablespoon vanilla extract
Fruit Topping
- 4-5 cups fresh or frozen blueberries (do not thaw if frozen)
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
Instructions
- Preheat Oven and Melt Butter: Preheat your oven to 375°F (190°C). Place the cubed salted butter in a 9×13 inch or similar-sized oval baking dish and put it in the oven for about 10 minutes, until the butter is fully melted.
- Prepare the Batter: In a mixing bowl, combine 1 cup plus 2 tablespoons flour, baking powder, ground ginger, cinnamon, and salt. Add the whole milk, 1 cup brown sugar, molasses, and vanilla extract. Mix everything until the batter is smooth and well combined.
- Prepare the Blueberries: In a separate bowl, toss the fresh or frozen blueberries with 1/4 cup brown sugar and 2 tablespoons flour, evenly coating the berries to prevent them from sinking.
- Assemble the Cobbler: Carefully pour the batter over the melted butter in the baking dish. Then spoon the blueberry mixture evenly over the batter surface. Do not stir; the batter will rise around the berries as it bakes.
- Bake: Bake the cobbler in the preheated oven for 50 to 55 minutes. The center should be set and the edges should develop a nice golden brown color.
- Serve: Allow the cobbler to cool slightly. Serve warm topped with ice cream or whipped cream for a deliciously comforting dessert experience.
Notes
- Use frozen blueberries directly from the freezer without thawing to avoid a watery cobbler.
- For a dairy-free version, substitute butter with margarine and milk with almond or oat milk.
- The spices can be adjusted to taste; add nutmeg or cloves for extra warmth.
- Leftovers can be refrigerated for up to 3 days and reheated before serving.
