Description

This Easy Cheesy Oat Flour Bread is a wholesome, protein-packed loaf made from just five main ingredients. Combining oat flour, eggs, yogurt, and cheddar cheese, it’s a gluten-free and savory bread option perfect for breakfasts, snacks, or alongside meals. With a simple mixing process and baked to golden perfection, this recipe delivers a moist, cheesy bread that’s both nutritious and satisfying.

Ingredients

Dry Ingredients

  • 240 g Oat Flour (or blended oats) – 2 cups
  • 1 tsp Bicarbonate of Soda
  • 1/2 tsp Salt (Optional)
  • 1 tsp Garlic Powder (Optional)

Wet Ingredients

  • 8 Eggs
  • 160 g Yogurt (about ⅔ cup)

Cheese

  • 120 g Cheddar, grated (½ cup)

Instructions

  1. Preheat and Prepare: Preheat your oven to 180°C (350°F). Grease or line a 2lb loaf tin to prevent sticking and ensure easy removal of the bread.
  2. Mix Wet Ingredients: In a large bowl, whisk together the eggs and yogurt until the mixture is smooth and homogenous, creating the base for the batter.
  3. Add Dry Ingredients: Stir in the oat flour, bicarbonate of soda, salt (if using), and garlic powder (if using). Mix gently until all ingredients are combined but avoid over-mixing to keep the bread tender.
  4. Incorporate Cheese: Fold in 100 g of the grated cheddar cheese evenly throughout the batter to infuse flavors and texture.
  5. Fill Loaf Tin: Pour the batter into the prepared loaf tin, smoothing the top with a spatula for even baking. Sprinkle the remaining 20 g of grated cheddar evenly across the surface.
  6. Bake: Bake in the preheated oven for 40-45 minutes, or until the bread turns golden brown and a toothpick inserted into the center comes out clean, indicating it is fully cooked.
  7. Cool and Serve: Remove the bread from the oven and allow it to cool in the tin for 5-10 minutes. Transfer to a wire rack to cool slightly before slicing and serving.

Notes

  • For best results, use freshly grated cheddar cheese for optimal flavor and melting properties.
  • Oat flour can be substituted with blended oats for a coarser texture.
  • Optional garlic powder and salt enhance the bread’s savory profile but can be omitted for a milder taste.
  • Ensure not to overmix the batter to keep the bread light and fluffy.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
