Ingredients
Dry Ingredients
- 240 g Oat Flour (or blended oats) – 2 cups
- 1 tsp Bicarbonate of Soda
- 1/2 tsp Salt (Optional)
- 1 tsp Garlic Powder (Optional)
Wet Ingredients
- 8 Eggs
- 160 g Yogurt (about ⅔ cup)
Cheese
- 120 g Cheddar, grated (½ cup)
Instructions
- Preheat and Prepare: Preheat your oven to 180°C (350°F). Grease or line a 2lb loaf tin to prevent sticking and ensure easy removal of the bread.
- Mix Wet Ingredients: In a large bowl, whisk together the eggs and yogurt until the mixture is smooth and homogenous, creating the base for the batter.
- Add Dry Ingredients: Stir in the oat flour, bicarbonate of soda, salt (if using), and garlic powder (if using). Mix gently until all ingredients are combined but avoid over-mixing to keep the bread tender.
- Incorporate Cheese: Fold in 100 g of the grated cheddar cheese evenly throughout the batter to infuse flavors and texture.
- Fill Loaf Tin: Pour the batter into the prepared loaf tin, smoothing the top with a spatula for even baking. Sprinkle the remaining 20 g of grated cheddar evenly across the surface.
- Bake: Bake in the preheated oven for 40-45 minutes, or until the bread turns golden brown and a toothpick inserted into the center comes out clean, indicating it is fully cooked.
- Cool and Serve: Remove the bread from the oven and allow it to cool in the tin for 5-10 minutes. Transfer to a wire rack to cool slightly before slicing and serving.
Notes
- For best results, use freshly grated cheddar cheese for optimal flavor and melting properties.
- Oat flour can be substituted with blended oats for a coarser texture.
- Optional garlic powder and salt enhance the bread’s savory profile but can be omitted for a milder taste.
- Ensure not to overmix the batter to keep the bread light and fluffy.
- Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
