Description

This Easy Fish Pie is a comforting and hearty dish combining a creamy mustard and parsley sauce with a variety of fish, topped with fluffy mashed potatoes and melted cheddar cheese. Baked to golden perfection, it’s a simple yet delicious meal perfect for family dinners.


Ingredients

For the Sauce and Filling

  • 30 g Butter
  • 30 g Plain flour
  • 600 ml Milk (Whole or semi-skimmed)
  • 2 tsp Dijon mustard
  • 15 g Fresh parsley (Finely chopped)
  • 200 g Cod (Cubed)
  • 200 g Smoked haddock (Cubed)
  • 200 g Skinless salmon (Cubed)
  • 150 g Frozen peas
  • Sea salt and freshly ground black pepper

For the Mash Topping

  • 1 kg Potatoes (See notes)
  • 3 tbsp Butter
  • 100 g Cheddar cheese (Grated)


Instructions

  1. Preheat Oven: Preheat your oven to 180℃ fan/200℃/Gas Mark 6/350F to prepare for baking the fish pie.
  2. Cook Potatoes: Peel and chop the potatoes, place them in a large pan with cold water, bring to boil and cook for 15-20 minutes until soft.
  3. Mash Potatoes: Drain the cooked potatoes, then mash them together with 3 tablespoons of butter, seasoning generously with salt and pepper. Set aside.
  4. Make Roux: In a large pan, melt 30 grams of butter and whisk in the plain flour to form a smooth paste (roux).
  5. Prepare Sauce: Gradually add the milk to the roux, whisking continuously, and cook for 4-5 minutes until the sauce thickens enough to coat the back of a spoon.
  6. Season Sauce: Stir in Dijon mustard, finely chopped fresh parsley, and season well with salt and pepper to enhance the flavor.
  7. Assemble Filling: Place the cubed cod, smoked haddock, salmon, and frozen peas into a baking dish, then pour the prepared sauce over the fish and peas evenly.
  8. Add Topping: Spread the mashed potatoes evenly over the fish mixture using a fork to create a textured surface; then scatter the grated cheddar cheese on top.
  9. Bake: Bake the assembled fish pie in the preheated oven for 20-25 minutes or until the mashed potatoes and cheese topping are golden brown and bubbling.

Notes

  • Use floury potatoes like Maris Piper or King Edward for the fluffiest mash topping.
  • Make sure fish is cut into even-sized cubes for uniform cooking.
  • This pie can be prepared in advance and baked just before serving.
  • For a lighter version, use semi-skimmed milk and reduce butter amounts slightly.
