Instructions
- Pulse the cookies: Place the Biscoff cookies in a food processor and pulse until you achieve fine crumbs, reserving 1–2 tablespoons for garnishing later.
- Mix the wet ingredients: In a medium bowl, beat the softened cream cheese on low speed until smooth. Add the Biscoff cookie butter and vanilla extract, mixing until fully combined.
- Combine crumbs and wet mixture: Stir in the Biscoff cookie crumbs and mix thoroughly until the mixture is thick enough to roll into balls.
- Form truffle balls: Using a small cookie scoop, portion about 1 tablespoon of the mixture and roll it into small balls. Place them on a parchment-lined baking sheet and freeze for 20–30 minutes to firm up.
