- 4 ounces crumbly goat cheese, sliced in 1/2-inch pieces (114 grams)
- 1 tablespoon fresh thyme leaves (6 grams)
Instructions
- Preheat and Prepare Pans: Preheat your oven to 400°F (204°C). Line two sheet pans with parchment paper to prevent sticking and set them aside.
- Roll and Cut Puff Pastry: Use a rolling pin to roll each puff pastry sheet into 9×12-inch rectangles. Using a 2 1/4-inch cookie cutter or a similar round object, cut out as many circles as possible from both sheets, aiming for about 32 circles in total.
- Arrange and Score Pastry: Place the puff pastry circles on the prepared pans about 2-3 inches apart. With a smaller cookie cutter, gently score a circle in the center of each puff pastry circle without cutting through completely, creating a guide for the filling.
- Dock and Egg Wash: Dock the centers of the puff pastry circles using a fork to prevent excessive puffing. Whisk the egg with 1 tablespoon of water, then brush this egg wash over the puff pastry circles for a golden finish.
- Initial Baking and Shaping: Bake the pastry circles for 5-6 minutes until they start to puff up. Remove from the oven and gently press down the centers using a small circular object like a spoon or bottle lid, leaving the edges puffy. Bake again for 7-8 minutes until golden brown.
- Fill and Final Bake: Press the centers down if they puff up again. Spoon about 1 teaspoon of pepper jelly into each tartlet center and top with sliced goat cheese. Bake for an additional 5 minutes until the cheese is warmed through and slightly softened.
