Description

This Easy Royal Icing Recipe is a quick and simple method to create smooth, glossy icing perfect for decorating cookies, cakes, and other baked goods. The icing dries hard, making it ideal for intricate designs and detailed decoration. It uses basic pantry ingredients and comes together in about 5 minutes, yielding a perfectly thick yet pipeable consistency.

Ingredients

Ingredients

  • 1 and ½ cups (180g) powdered sugar
  • 2 tablespoons (30mL) warm water
  • ½ tablespoon (10g) light corn syrup
  • ⅛ teaspoon vanilla or almond extract

Instructions

  1. Prepare Powdered Sugar: Place powdered sugar in a medium bowl and set aside, creating a base ready to be combined with liquids.
  2. Mix Liquid Ingredients: In a small bowl, combine warm water, light corn syrup, and your choice of vanilla or almond extract. Stir until the corn syrup is fully dissolved to ensure even sweetness and texture.
  3. Combine and Adjust Consistency: Add the sugar water mixture to the powdered sugar and stir until completely combined. The mixture will be thick and should have a consistency where it slowly drips and disappears within about 12 seconds. If too thick, add water dropwise; if too thin, add powdered sugar teaspoon by teaspoon. Use the icing immediately for best results.
  4. Storage: If you need to wait before using, cover the icing tightly and store it for up to 1 day. Before reuse, stir again and adjust the consistency by adding more water if necessary, then re-test.
  5. Add Color: To color your icing, gel food coloring is recommended for vibrant results without thinning the icing. AmeriColor gel colors are a preferred brand with a wide range of available shades.

Notes

  • Use gel food coloring to avoid thinning the icing when adding color.
  • Adjust the icing consistency carefully; too thick will be difficult to pipe, too thin won’t hold shapes well.
  • Use the icing immediately for the best texture and drying time.
  • If storing, ensure airtight coverage to prevent the icing from drying out.
  • Ideal for decorating cookies, cupcakes, and creating detailed edible designs.
