Instructions

  1. Sauté Ingredients: Place a large pan on the stove over medium heat. Add the oil, ground turkey, diced onion, diced zucchini, minced garlic, kosher salt, and Italian seasoning. Break up the turkey and stir continuously as you cook for 5-7 minutes until the turkey is fully cooked and the vegetables are softened.
  2. Add Noodles and Simmer: Break the uncooked lasagna noodles into large pieces and add them to the pan along with the marinara sauce and water. Stir everything together so that the noodles are evenly distributed and submerged under the sauce. Lower the heat to low and cover the pan with a lid. Let the lasagna simmer gently for 25-35 minutes until the noodles are tender, stirring every 5 minutes to prevent sticking and to ensure even cooking.
  3. Incorporate Cheeses: Once the noodles are soft, remove the pan from heat and uncover. Stir in the cottage cheese and half of the shredded mozzarella cheese until the mozzarella melts into the mixture, creating a creamy texture.
