Almonds and Chocolate
- 2 cups unblanched whole almonds
- 11 ounces milk chocolate, chopped
- 1 cup almonds (for sprinkling)

Toffee Mixture

- 1 cup sugar
- 3 tablespoons cold water
Instructions
- Toast Almonds: Preheat oven to 350°F (175°C). Spread the 2 cups of whole almonds in a shallow baking pan and toast for 5-10 minutes, stirring occasionally until they are golden brown. Remove from oven and let cool.
- Prepare Chocolate and Almonds: Using a food processor, pulse the chopped milk chocolate until finely ground, taking care not to overprocess. Transfer to a bowl. Pulse the toasted almonds until coarsely chopped. Set aside 1 cup of chopped almonds to sprinkle later.
- Layer Pan: Grease a 15x10x1-inch pan. Sprinkle 1 cup of the coarsely chopped almonds evenly over the bottom, then sprinkle 1 cup of the finely ground chocolate on top.
- Cook Toffee: In a heavy saucepan, combine the cubed butter, sugar, and cold water. Cook over medium heat, stirring occasionally, until a candy thermometer reaches 290°F (the soft crack stage). This is crucial to ensure perfect toffee texture.
- Assemble Toffee: Immediately pour the hot toffee mixture evenly over the layered almonds and chocolate in the pan. Quickly sprinkle the remaining chocolate and almonds evenly on top before the toffee sets.
- Set and Serve: Refrigerate the pan until the toffee is completely set and firm. Once set, break into approximately 32 pieces and serve or store in an airtight container.
