Description

Fantastic Butter Toffee is a classic homemade treat featuring toasted almonds covered in a rich, buttery toffee base, layered with smooth milk chocolate. This recipe delivers a perfect blend of crunchy nuts and creamy chocolate, making it an irresistible sweet snack or gift.

Ingredients

Almonds and Chocolate

  • 2 cups unblanched whole almonds
  • 11 ounces milk chocolate, chopped
  • 1 cup almonds (for sprinkling)
  • 1 cup chocolate (for sprinkling)

Toffee Mixture

  • 1 cup butter, cubed
  • 1 cup sugar
  • 3 tablespoons cold water

Instructions

  1. Toast Almonds: Preheat oven to 350°F (175°C). Spread the 2 cups of whole almonds in a shallow baking pan and toast for 5-10 minutes, stirring occasionally until they are golden brown. Remove from oven and let cool.
  2. Prepare Chocolate and Almonds: Using a food processor, pulse the chopped milk chocolate until finely ground, taking care not to overprocess. Transfer to a bowl. Pulse the toasted almonds until coarsely chopped. Set aside 1 cup of chopped almonds to sprinkle later.
  3. Layer Pan: Grease a 15x10x1-inch pan. Sprinkle 1 cup of the coarsely chopped almonds evenly over the bottom, then sprinkle 1 cup of the finely ground chocolate on top.
  4. Cook Toffee: In a heavy saucepan, combine the cubed butter, sugar, and cold water. Cook over medium heat, stirring occasionally, until a candy thermometer reaches 290°F (the soft crack stage). This is crucial to ensure perfect toffee texture.
  5. Assemble Toffee: Immediately pour the hot toffee mixture evenly over the layered almonds and chocolate in the pan. Quickly sprinkle the remaining chocolate and almonds evenly on top before the toffee sets.
  6. Set and Serve: Refrigerate the pan until the toffee is completely set and firm. Once set, break into approximately 32 pieces and serve or store in an airtight container.

Notes

  • Use a candy thermometer to ensure the toffee reaches the correct temperature for proper texture.
  • Ensure the almonds are toasted but not burnt to enhance their nutty flavor.
  • Work quickly when pouring the hot toffee and sprinkling chocolate to avoid premature setting.
  • Store toffee in a cool, dry place in an airtight container to maintain freshness and crunch.
  • You can substitute milk chocolate with dark or white chocolate for different flavor variations.
