Instructions

  3. Make custard mixture: In a large bowl, whisk together 8 large eggs, 2 cups almond milk, 2 teaspoons vanilla extract, and 1/2 cup coconut sugar until fully combined. Pour this custard mixture evenly over the bread cubes.
  4. Add raisins and refrigerate: Sprinkle 1/2 cup of raisins over the custard-soaked bread. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours or overnight to allow the bread to absorb the custard fully.
  5. Bake the casserole: Preheat the oven to 350°F (175°C). Remove the casserole from the refrigerator and bake uncovered for 40 to 50 minutes. Start checking at the 40-minute mark; the top should be golden and the custard set but still moist.
