Description

A delightful and refreshing Fresh Berry Eton Mess featuring a luscious blend of whipped cream, sweetened berry sauce, and crunchy meringue cookies. This classic British dessert is quick to prepare, perfect for summer gatherings or a light, fruity treat.

Ingredients

Berry Sauce

  • 2 cups mixed berries (1 cup raspberries, 1 cup blueberries)
  • 2 tbsp icing / powdered / confectioner’s sugar, sifted

Whipped Cream

  • 2 cups heavy / whipping cream
  • 2 tbsp icing / powdered / confectioner’s sugar, sifted

Assembly

  • 50 g (approximately 2 cups) meringues / meringue cookies / meringue kisses (ready-made)
  • Fresh strawberries / raspberries / blueberries for serving

Instructions

  1. Make the berry sauce: Combine 2 cups of mixed berries with 2 tablespoons of sifted icing sugar in a food processor or use an immersion blender to blend until smooth, creating a vibrant berry sauce.
  2. Whip the cream: In a separate bowl, whip the 2 cups of heavy cream with the remaining 2 tablespoons of icing sugar until soft peaks form. Gently fold in 3 tablespoons of the prepared berry sauce to impart a subtle fruity flavor and pretty pink hue.
  3. Layer the dessert: Roughly break up the meringue cookies into bite-sized pieces. In serving glasses or a large bowl, layer the whipped cream mixture, berry sauce, broken meringues, and fresh berries, repeating to create appealing layers.
  4. Serve immediately: Enjoy the Eton Mess right away to maintain the meringue’s crunch and the cream’s freshness.

Notes

  • Use fresh seasonal berries for best flavor and color.
  • For a lighter option, use reduced-fat cream or a dairy-free alternative, though texture will differ.
  • Whip cream just until soft peaks to prevent it from turning buttery.
  • This dessert is best served immediately to keep meringues crisp.
  • Leftovers can be kept in the refrigerator but meringues will soften.
