Description

A vibrant and refreshing fruit salad that combines a variety of fresh fruits tossed in a sweet citrus and honey dressing. Perfect as a healthy snack or a light dessert, this fruit salad is quick to prepare and can be enjoyed immediately or chilled for enhanced flavor blending.

Ingredients

Dressing

  • 2 tablespoons orange juice
  • 2 tablespoons pineapple juice
  • ¼ cup honey

Fruit

  • 2 cups fresh pineapple wedges
  • 1 pound strawberries, hulled and quartered (about 2 1/2 cups)
  • 3 kiwi fruit, peeled, quartered, and sliced (about 6 oz or 1 1/2 cups)
  • 1 ½ cups fresh orange wedges, halved (or fresh mandarin oranges)
  • 1 cup red seedless grapes, cut in half (about 5 oz)
  • 1 cup blueberries (about 5 oz)
  • 1 cup blackberries (about 5 oz)

Instructions

  1. Make the Dressing: Whisk together orange juice, pineapple juice, and honey in a small bowl until well combined and smooth.
  2. Prepare the Fruit: Quarter the strawberries, halve the grapes, peel and cut the kiwi into quarters then slice, halve the fresh orange wedges or mandarin oranges, and keep the blackberries and blueberries whole.
  3. Combine Fruit and Dressing: Place all the prepared fruit in a large bowl. Pour the dressing over the fruit and gently toss to ensure all fruit pieces are evenly coated without bruising the berries.
  4. Chill: Cover the bowl and refrigerate the fruit salad for at least 1 hour to allow flavors to meld. For immediate serving, it can be served right away, but note the strawberries will soften over time due to the honey.

Notes

  • Because of the honey, strawberries will start to break down; serve immediately for firmer texture.
  • If you prefer, refrigerate the salad for several hours to develop deeper flavors despite softer strawberries.
  • Use fresh, ripe fruit for the best taste and texture.
  • Adjust the amount of honey if you prefer a less sweet dressing.
  • Gently toss the fruit to avoid crushing delicate berries.
