Crispy on the outside with a creamy, spicy filling, these Fried Deviled Eggs combine the classic deviled egg flavors with a crunchy panko coating, perfect for an indulgent appetizer or party snack.


Ingredients

Eggs and Filling

  • 6 eggs (hard boiled and peeled)
  • 2 Tablespoons pickled jalapenos (finely minced)
  • 1 Tablespoon pickled jalapeno juice
  • 1 Teaspoon Dijon mustard
  • ¼ Cup mayonnaise
  • 1 Teaspoon salt (divided)
  • 1 Teaspoon Cajun seasoning (divided)
  • ½ Teaspoon black pepper

Breading and Frying

  • ½ Cup all-purpose flour
  • 1 egg (lightly beaten)
  • 1 Cup panko breadcrumbs
  • oil (vegetable or canola, for frying)

Garnish

  • chives (freshly chopped)
  • pickled jalapenos (in slices)


Instructions

  1. Slice the Eggs: Slice each hard-boiled egg in half lengthwise carefully to preserve the shape.
  2. Remove Yolks: Gently remove the yolks from each egg half and place them into a medium mixing bowl, setting the egg whites aside on a plate or serving platter.
  3. Make the Filling: Add finely minced pickled jalapenos, pickled jalapeno juice, Dijon mustard, mayonnaise, half of the salt and Cajun seasoning, and black pepper to the yolks. Mix thoroughly until the mixture is smooth and creamy, then set aside.
  4. Prepare Breading Station: Set up three shallow bowls for dredging: one with all-purpose flour, one with the lightly beaten egg, and one with panko breadcrumbs mixed with the remaining salt and Cajun seasoning.
  5. Coat Egg Whites: Carefully dip each egg white half first into the flour, then the beaten egg, and finally coat evenly with the seasoned panko breadcrumbs.
  6. Heat Oil for Frying: In a deep-frying pan or heavy pot, heat 2 inches of vegetable or canola oil over medium-high heat until it reaches 360°F.
  7. Fry Egg Whites: Fry the breaded egg whites in batches if needed, cooking for 1 to 2 minutes on each side until golden brown and crispy.
  8. Drain and Cool: Remove the fried egg whites with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil. Allow them to cool slightly.
  9. Fill Egg Whites: Using a spoon or piping bag, evenly distribute the creamy yolk filling into the hollow centers of the fried egg whites.
  10. Add Garnish: Sprinkle additional Cajun seasoning over the filled eggs and garnish with pickled jalapeno slices and freshly chopped chives if desired.
  11. Serve: Arrange the fried deviled eggs on a serving platter and serve immediately while warm and crispy.
