Description

These Frosted Lucky Charms Cookies combine classic sugar cookie dough with the whimsical colors and flavors of Lucky Charms cereal marshmallows and sprinkles. Soft, buttery cookies are topped with a sweet vanilla frosting and garnished with the iconic colorful marshmallows for a magically delicious treat perfect for parties or anytime fun snacks.

Ingredients

Cookie Dough

  • 1 Cup butter
  • 1/4 Cup brown sugar
  • 1/4 Cup granulated sugar
  • 1 egg
  • 1 Teaspoon vanilla extract
  • 2 Cups all purpose flour
  • 1 Teaspoon baking soda
  • 1/4 Teaspoon salt
  • 1/4 Cup sprinkles

Frosting

  • 1 1/2 Cups icing sugar
  • 1/2 Teaspoon vanilla extract
  • 1/4 Cup unsalted butter
  • 2 to 3 Teaspoons milk

Garnish

  • 1/2 Cup marshmallows (from Lucky Charms cereal)

Instructions

  1. Mix dry ingredients: In a medium mixing bowl, combine the all-purpose flour, salt, baking soda, and sprinkles thoroughly to prepare the dry mixture.
  2. Cream wet ingredients: In a separate bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract and mix well to combine.
  3. Combine dough and chill: Gradually add the dry ingredients into the wet ingredients and mix until a uniform dough forms. Shape the dough into a ball, wrap tightly in plastic wrap, and refrigerate for one hour to chill and firm up.
  4. Prepare baking sheets: Preheat the oven to 325 degrees Fahrenheit. Grease two baking sheets or line them with parchment paper and set aside.
  5. Scoop and bake: Remove the chilled dough from the refrigerator. Scoop tablespoon-sized portions of dough onto the prepared baking sheets and gently flatten each with the palm of your hand. Bake for 8 to 10 minutes, or until the edges are lightly browned.
  6. Cool cookies: Remove the cookies from the oven and allow them to cool completely on a wire rack before applying frosting.
  7. Make frosting: In a bowl, mix together the icing sugar, vanilla extract, unsalted butter, and 2 to 3 teaspoons of milk. Stir until you achieve a smooth, spreadable consistency suitable for icing.
  8. Frost and garnish: Spread the prepared frosting evenly onto the cooled cookies, leaving a small border around the edges. Place 4 to 5 Lucky Charms marshmallows on top of each frosted cookie to finish.

Notes

  • Refrigerating the dough helps prevent spreading and keeps the cookies thicker and chewier.
  • Adjust milk quantity incrementally to get the perfect frosting consistency – it should be thick but spreadable.
  • Use freshly crushed Lucky Charms marshmallows for the best flavor and appearance on top of the cookies.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
  • You can substitute sprinkles with other colorful toppings if desired, but sprinkles complement the fun theme best.
