Ingredients
Cookie Dough
- 1 Cup butter
- 1/4 Cup brown sugar
- 1/4 Cup granulated sugar
- 1 egg
- 1 Teaspoon vanilla extract
- 2 Cups all purpose flour
- 1 Teaspoon baking soda
- 1/4 Teaspoon salt
- 1/4 Cup sprinkles
Frosting
- 1 1/2 Cups icing sugar
- 1/2 Teaspoon vanilla extract
- 1/4 Cup unsalted butter
- 2 to 3 Teaspoons milk
Garnish
- 1/2 Cup marshmallows (from Lucky Charms cereal)
Instructions
- Mix dry ingredients: In a medium mixing bowl, combine the all-purpose flour, salt, baking soda, and sprinkles thoroughly to prepare the dry mixture.
- Cream wet ingredients: In a separate bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract and mix well to combine.
- Combine dough and chill: Gradually add the dry ingredients into the wet ingredients and mix until a uniform dough forms. Shape the dough into a ball, wrap tightly in plastic wrap, and refrigerate for one hour to chill and firm up.
- Prepare baking sheets: Preheat the oven to 325 degrees Fahrenheit. Grease two baking sheets or line them with parchment paper and set aside.
- Scoop and bake: Remove the chilled dough from the refrigerator. Scoop tablespoon-sized portions of dough onto the prepared baking sheets and gently flatten each with the palm of your hand. Bake for 8 to 10 minutes, or until the edges are lightly browned.
- Cool cookies: Remove the cookies from the oven and allow them to cool completely on a wire rack before applying frosting.
- Make frosting: In a bowl, mix together the icing sugar, vanilla extract, unsalted butter, and 2 to 3 teaspoons of milk. Stir until you achieve a smooth, spreadable consistency suitable for icing.
- Frost and garnish: Spread the prepared frosting evenly onto the cooled cookies, leaving a small border around the edges. Place 4 to 5 Lucky Charms marshmallows on top of each frosted cookie to finish.
Notes
- Refrigerating the dough helps prevent spreading and keeps the cookies thicker and chewier.
- Adjust milk quantity incrementally to get the perfect frosting consistency – it should be thick but spreadable.
- Use freshly crushed Lucky Charms marshmallows for the best flavor and appearance on top of the cookies.
- Store cookies in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
- You can substitute sprinkles with other colorful toppings if desired, but sprinkles complement the fun theme best.
