Ingredients
Main Ingredients
- 1 1/2 cup Greek Yogurt
- 3 tablespoons Maple Syrup
- 1/4 cup Powdered Peanut Butter
- 1 cup Blueberries
- 24 extra Blueberries to decorate
Topping Ingredients
- 1.5 ounces Dark Chocolate Chips
- 1/4 teaspoon Coconut Oil
Instructions
- Prepare Mold: Place a 12-hole silicone mold on a plate and set it aside to use for freezing the bites.
- Mix Yogurt Base: In a mixing bowl, stir together the Greek yogurt, maple syrup, and powdered peanut butter until the mixture is smooth and well combined.
- Add Blueberries: Gently fold in 1 cup of blueberries, stirring carefully to evenly distribute them throughout the yogurt mixture without crushing them.
- Fill Silicone Mold: Divide the yogurt and blueberry mixture evenly into the 12 silicone muffin holes, filling each cavity with an equal amount.
- Melt Chocolate Topping: In a microwave-safe bowl, melt the dark chocolate chips together with the coconut oil by heating in 30-second bursts, stirring in between, until fully melted and smooth.
- Decorate Bites: Drizzle a small amount of the melted chocolate over the top of each yogurt bite, then add two extra blueberries on top of each as decoration.
- Freeze Bites: Place the plate with the filled silicone mold into the freezer overnight or for at least 4 hours until the yogurt hardens completely.
- Thaw Before Serving: Remove from the freezer and let the bites thaw at room temperature for 10-12 minutes before eating to enjoy a creamier texture.
Notes
- Use Greek yogurt for a thicker and creamier texture, as well as higher protein content.
- Powdered peanut butter provides peanut flavor with less fat than regular peanut butter.
- Maple syrup can be substituted with honey or agave syrup if preferred.
- Be careful not to overmix the blueberries to avoid them breaking and coloring the yogurt too much.
- Store leftover bites in the freezer for up to one week for best freshness.
