Description

These Fruit on the Bottom Greek Yogurt Snack Cups combine the creamy richness of Greek yogurt with a sweet and tangy homemade strawberry compote. Perfect for a quick, healthy snack or a light dessert, this easy no-bake recipe layers luscious fruit sauce beneath honey-sweetened yogurt, creating a refreshing treat that is both satisfying and nutritious.

Ingredients

Strawberry Compote

  • 2 cups strawberries (fresh or frozen)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 2 pinches salt

Yogurt Layer

  • 1/2 cup plain Greek yogurt
  • 1/2 tablespoon honey
  • 2 tablespoons strawberry compote (from above)

Instructions

  1. Prepare Strawberry Compote: In a medium saucepan, combine 2 cups of strawberries, 2 tablespoons of maple syrup, 1 teaspoon of vanilla extract, 1 teaspoon of lemon juice, and 1 pinch of salt. Cook the mixture over medium heat, stirring occasionally to prevent sticking, until the berries begin to break down, about 5-7 minutes.
  2. Mash and Simmer: Using a fork or potato masher, mash the cooked strawberries to release more juice and create a chunky sauce texture. Continue to simmer the mixture for an additional 5 minutes or until the compote thickens to your desired consistency. Remove the saucepan from heat and allow the compote to cool completely.
  3. Mix Yogurt with Honey: In a small bowl, combine 1/2 cup of plain Greek yogurt with 1/2 tablespoon of honey, stirring well until smooth and evenly sweetened.
  4. Assemble Snack Cups: In small containers or mason jars, spoon 2 tablespoons of the cooled strawberry compote into the bottom. Then, carefully add the honey-sweetened Greek yogurt on top of the compote, creating a distinct layer.
  5. Refrigerate and Serve: Seal the containers and refrigerate the snack cups until ready to serve. Enjoy chilled for a refreshing and healthy snack.

Notes

  • You can use fresh or frozen strawberries for the compote—if using frozen, no need to thaw beforehand.
  • The strawberry compote can be made in advance and stored in the refrigerator for up to 3 days.
  • Adjust the sweetness by adding more or less maple syrup or honey according to your taste preferences.
  • Serve these snack cups as a healthy breakfast option or as a light dessert.
  • For added texture, sprinkle granola or chopped nuts on top before serving.
