Ingredients

Donuts

  • 1 cup Fruity Pebbles Cereal
  • 3/4 cup Buttermilk
  • 1 2/3 cup All-purpose Flour
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/2 stick Salted Butter, melted (4 tablespoons)
  • 1/2 cup White Granulated Sugar
  • 1 Large Egg
  • 2 tablespoons Plain Greek Yogurt or Sour Cream
  • 2 tablespoons Canola or Vegetable Oil
  • 1/2 tablespoon Vanilla Extract

Glaze

  • 1 1/2 cups Powdered Sugar
  • 3 tablespoons Milk
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Strawberry Extract
  • 3 drops Pink Gel Food Dye
  • 1 cup Fruity Pebbles Cereal (for topping)

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease a donut pan thoroughly to ensure the donuts don’t stick. Set the pan aside.
  2. Soak Fruity Pebbles: In a large mixing bowl, combine 1 cup of Fruity Pebbles cereal with 3/4 cup buttermilk. Stir gently to combine and let it sit briefly to soften the cereal.
  3. Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, and baking soda until evenly combined.
  4. Combine wet ingredients: Lightly whisk the egg and add it to the cereal and buttermilk mixture. Then add the canola or vegetable oil, vanilla extract, Greek yogurt (or sour cream), and melted butter. Stir everything together until well combined.
  5. Incorporate dry ingredients: Gradually add the dry flour mixture into the wet ingredients, stirring continuously until the batter is smooth and all components are thoroughly combined.
  6. Fill donut pan: Using a piping bag fitted with a Wilton 2A tip or a spoon, fill each cavity of the prepared donut pan about three-quarters full with the batter.
  7. Bake the donuts: Place the pan in the oven and bake for 10 minutes or until the tops of the donuts spring back when gently pressed and appear firm to the touch.
  8. Cool in pan: Remove the pan from the oven and allow the donuts to cool in the pan for 15-20 minutes until completely cool to the touch.
  9. Prepare glaze: While the donuts cool, whisk together powdered sugar, milk, vanilla extract, strawberry extract, and pink gel food dye in a bowl until smooth and well combined.
  10. Glaze the donuts: Carefully remove the cooled donuts from the pan. Dip the tops of the donuts into the prepared glaze and place them glaze-side up on parchment paper or a cooling rack.
  11. Add Fruity Pebbles topping: Lightly crush the remaining 1 cup of Fruity Pebbles cereal and sprinkle it diagonally over the glazed donuts, pressing gently so it adheres.
  12. Serve: Allow the glaze to set for a few minutes, then serve and enjoy your colorful and flavorful Fruity Pebbles Donuts!

Notes

  • Ensure the donut pan is well greased to prevent sticking.
  • You can substitute sour cream for Greek yogurt if preferred; both add moisture and tenderness.
  • Use a piping bag for cleaner donut shaping, but spooning batter into the pan also works.
  • The frosting sets best if the donuts are completely cool before dipping.
  • Storage: Keep donuts in an airtight container at room temperature for up to 2 days.
  • For a dairy-free option, substitute butter with a plant-based alternative and Greek yogurt with a dairy-free yogurt.
