Ingredients

Dough Ingredients

  • 1/2 cup whole milk, lightly warmed
  • 2 tablespoons granulated sugar
  • 1 envelope (2 1/4 teaspoons) active dry yeast or instant yeast
  • 4 tablespoons unsalted butter, melted and lightly cooled
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt

Roasted Garlic Filling

  • 4 heads of garlic, tops cut off to expose the cloves
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, softened to room temperature
  • 1/4 cup chopped parsley
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 2 cups shredded mozzarella cheese, preferably thick-cut

Topping

  • 2 tablespoons butter, melted
  • 1 tablespoon chopped parsley
  • 1 tablespoon freshly grated parmesan cheese, plus more for garnish
  • 1-2 teaspoons minced garlic


Instructions

  1. Activate Yeast: Warm the milk to about 110°F using a microwave for 45-50 seconds, then combine with sugar and sprinkle yeast on top. Let it sit undisturbed for 7-10 minutes until bubbly if using active dry yeast. Skip this wait if using instant yeast.
  2. Make Dough: Add melted butter, egg, egg yolk, flour, and salt to the yeast mixture. Knead with a stand mixer dough hook on medium speed for 6-8 minutes until dough is smooth and comes together. Add more flour if sticky, or knead by hand for 10 minutes on a floured surface.
  3. First Rise: Shape dough into a ball, place in greased bowl, cover with plastic wrap and kitchen towel, and let rise in a warm place until doubled in size, about 1-2 hours.
  4. Roast Garlic: Preheat oven to 400°F. Prepare garlic bulbs by peeling outer skin, then place cut side up in foil-lined baking vessel. Drizzle olive oil, tent with foil, and roast for 30-40 minutes until cloves are golden and soft. Cool and remove cloves from skins.
  5. Roll Out Dough: Punch down risen dough and roll into 13×8 inch rectangle on a floured surface.
  6. Prepare Filling: Pulse roasted garlic cloves in food processor to form a paste. Spread softened butter over dough leaving edges clear, then spread garlic paste. Sprinkle with parsley, salt, pepper, and shredded mozzarella cheese, patting cheese into mixture.
  7. Roll Dough: Roll dough into a tight log starting from the long side, seam down. Stretch and seal seam edges. Optionally trim ends for even size.
  8. Cut Rolls: Slice log crosswise into 9 equal pieces using a sharp knife or floss.
  9. Second Rise: Place rolls in a parchment-lined 9×9 inch baking dish, cover with plastic wrap and towel, and let rise for 1-2 hours until puffy.
  10. Bake Rolls: Preheat oven to 350°F. Remove cover and bake rolls for 30-35 minutes until lightly golden.
  11. Prepare Topping: Mix melted butter, chopped parsley, parmesan cheese, and minced garlic in a bowl and set aside.
  12. Finish Rolls: Immediately brush baked rolls with garlic butter parmesan topping and garnish with extra parmesan. Serve warm.
