These Garlic Butter Rolls with Cream Cheese are a decadent and flavorful twist on classic brioche rolls. Dip
- ½ cup milk (room temperature)
- 3 tablespoon garlic (minced)
- 1 tablespoon sugar

- 2 eggs (beaten)
- ¼ cup parmesan (grated)
- 2 tablespoon parsley (chopped)
- 8 oz butter (2 sticks, melted and slightly cooled)

- 6 large brioche rolls
Instructions
- Preheat the oven: Preheat your oven to 350ºF (177ºC). Line a rimmed baking sheet with parchment paper to prevent sticking and make cleanup easy.
- Prepare the cream cheese filling: In the bowl of a stand mixer, combine the cream cheese, 3 tablespoons sugar, cream, and ⅛ teaspoon salt. Beat on medium-high speed until the mixture is smooth and fluffy. Transfer the mixture into a piping bag or a Ziplock bag with a small corner cut off for easy piping.
- Make the garlic butter dip: In a medium-sized bowl big enough to dip the rolls, whisk together the milk, 1 tablespoon sugar, 1 tablespoon salt, beaten eggs, grated parmesan, and chopped parsley. Slowly whisk in the slightly cooled melted butter, making sure it doesn’t cook the eggs. Set aside.
- Score the rolls: Take each brioche roll and cut 6 deep slices evenly spaced, being careful not to cut all the way through the bottom. The cuts should create a star shape on top and allow room for filling without breaking the roll apart.
- Fill the rolls: Pipe the cream cheese mixture evenly into each slice of the cuts in the rolls, filling the crevices well but keeping the rolls intact.
- Dip the rolls: Dip the bottom of each filled roll into the garlic butter mixture, then invert the roll and hold it submerged so the butter seeps into the crevices without squeezing out the cream cheese. Place the coated rolls onto the prepared baking sheet.
- Add flaky salt and bake: Sprinkle flaky salt over the tops of the rolls. Bake in the preheated oven for 12-15 minutes until the rolls are golden brown and crispy on top.

- Ensure the butter is cooled before adding to the egg mixture to avoid cooking the eggs prematurely.
