Ingredients

Skewers and Chicken

  • 10-12 bamboo or wooden skewers
  • 600 g chicken breast (or thighs or tenderloin) (makes 8-10 skewers)

Seasonings

  • 1 teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • ½ teaspoon paprika (sweet or smoked)
  • ½ teaspoon onion powder
  • 3 teaspoons vegetable oil

Garlic Parmesan Sauce

  • 100 g salted butter, melted
  • 4 cloves garlic, minced or finely chopped
  • 2 teaspoons Italian seasoning (or Tuscan seasoning)
  • 2 tablespoons lemon juice
  • ⅓ cup lightly packed parmesan cheese, finely grated (20g / ¾oz)
  • 1-2 teaspoons sriracha (or other hot sauce), or to taste

Instructions

  1. Prepare Skewers: If using wooden or bamboo skewers, soak them in water for 30 minutes to prevent burning during cooking. This step ensures skewers remain intact and safe on the grill.
  2. Cut Chicken: Cut the chicken breast or chosen chicken pieces into chunks about 2 ½ cm (1 inch) long by 1 ¼ cm (½ inch) thick to ensure even cooking on skewers.
  3. Season Chicken: In a mixing bowl, combine the chicken chunks with salt, black pepper, paprika, onion powder, and vegetable oil. Toss well to evenly coat the chicken pieces with spices and oil.
  4. Thread Chicken: Thread the seasoned chicken chunks tightly onto the soaked skewers, leaving no gaps between the pieces to promote even grilling.
  5. Make Garlic Parmesan Sauce: Melt the butter in a saucepan over low to medium heat. Add the minced garlic and Italian seasoning and cook gently for about 2 minutes, allowing the garlic to infuse the butter without burning.
  6. Add Lemon and Sriracha: Remove the pan from heat and stir in the lemon juice and sriracha sauce. Let the sauce rest for a minute, then stir in the parmesan cheese. The cheese does not need to melt fully; it will add flavor and texture to the sauce.
  7. Reserve Sauce: Set aside about 2 tablespoons of this sauce for serving later. The remainder will be used to baste the chicken while cooking.
  8. Preheat Grill or Pan: Heat a BBQ grill to medium-high heat or preheat a grill pan on the stove over medium-high heat for several minutes until hot.
  9. Cook Chicken Skewers – Batch One: Place half the chicken skewers on the grill pan without crowding. Cooking in batches prevents steaming and ensures proper charring.
  10. Grill First Sides: Cook the chicken skewers for 3 minutes on the first side, allowing grill marks and partial cooking.
  11. Turn Skewers: Turn the skewers and cook for an additional 2 minutes on the second side.
  12. Baste and Continue Cooking: Reduce the heat to medium. Turn the skewers again and brush the top side generously with the reserved basting sauce. Cook for another 2 minutes, watching carefully to avoid burning while developing charred edges.
  13. Final Turn and Baste: Flip the skewers one last time, baste again with sauce, and cook a final 2 minutes until chicken is cooked through but still juicy. Adjust heat if needed to prevent burnt spots.
  14. Finish Cooking if Needed: If chicken is not fully cooked after these steps, continue flipping and cooking in short increments until done.
  15. Second Batch: Transfer cooked skewers to a warm oven set around 70°C (160°F) to keep warm while cooking the remaining skewers as before.
