Crispy, golden smashed potatoes are an irresistible side dish perfect for any meal. Boiled until tender, then smashed and baked with olive oil, garlic, oregano, and parmesan cheese, these flavorful potatoes are crispy on the outside and soft on the inside, topped with fresh parsley for a burst of color and freshness.

- 1 pound baby Yukon Gold potatoes (about 16 to 20)

- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/3 cup freshly grated parmesan cheese
- Salt, to taste
- Ground black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat the oven: Set your oven to 425°F (220°C) to ensure it’s hot and ready for baking the smashed potatoes later.
- Boil the potatoes: In a large pot of salted boiling water, cook the baby Yukon Gold potatoes for 15-20 minutes until they are fork-tender. Drain them well and let them cool slightly so you can handle them safely.
- Smash the potatoes: Arrange the cooked potatoes on a large rimmed baking sheet. Using a potato masher or the bottom of a glass, gently press down on each potato to flatten them to about half their original thickness.
- Season the potatoes: Drizzle the olive oil evenly over the smashed potatoes. Sprinkle the minced garlic, dried oregano, freshly grated parmesan cheese, salt, and pepper over them. Using your hands, toss and gently mix everything to coat the potatoes evenly.
- Bake the potatoes: Bake the potatoes in the preheated oven for 15 minutes until the bottoms turn golden and crispy. Then, carefully flip each potato using a spatula, optionally adding more olive oil, salt, and pepper for extra flavor, and bake for an additional 12-15 minutes until the potatoes are crispy and delicious on both sides.
- Garnish and serve: Remove the crispy smashed potatoes from the oven and sprinkle fresh chopped parsley over the top for a fresh and colorful finish. Serve immediately while hot and crispy.

- You can use other small potato varieties like baby red potatoes if desired.
