Ingredients
Chicken Marinade
- 1/4 cup olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon Dijon mustard
- 1/4 teaspoon paprika
- Zest and juice from 1 lemon
- Kosher salt, to taste
- Fresh cracked pepper, to taste
Chicken
- 1 1/2 pounds boneless, skinless chicken breasts
Garnish
- 1 tablespoon fresh chopped parsley
- 1 tablespoon fresh chopped dill
- Crumbled feta cheese, for garnish
- Grilled lemon slices, for garnish
Instructions
- Prepare the marinade: In a large bowl, whisk together olive oil, balsamic vinegar, dried oregano, garlic powder, Dijon mustard, paprika, lemon zest, lemon juice, and a couple large pinches of kosher salt and freshly cracked pepper until well combined.
- Marinate the chicken: Slice each chicken breast in half lengthwise to create 4 thinner pieces. Add the chicken pieces to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes and up to 2 hours to allow flavors to penetrate the meat.
- Heat the grill pan: Remove the marinated chicken from the fridge. Heat a large grill pan over medium-high heat until hot enough to sizzle when chicken is added.
- Cook the chicken: Place the marinated chicken pieces in the grill pan in a single layer, cooking for 4-5 minutes on one side. Flip the chicken and cook for another 4-5 minutes until the internal temperature reaches 165°F (74°C), indicating the chicken is fully cooked and juicy.
- Garnish and serve: Remove the chicken from the pan and arrange on a serving platter. Sprinkle with fresh chopped parsley and dill, crumble feta cheese on top, and add grilled lemon slices for an extra burst of citrus flavor. Serve immediately.
- Enjoy: Perfect for a tasty, healthy meal. For best results, complement with your favorite side dishes such as Greek salad, rice, or roasted vegetables.
