Ingredients

Chicken Marinade

  • 1/4 cup olive oil

Chicken

Instructions

  1. Prepare the marinade: In a large bowl, whisk together olive oil, balsamic vinegar, dried oregano, garlic powder, Dijon mustard, paprika, lemon zest, lemon juice, and a couple large pinches of kosher salt and freshly cracked pepper until well combined.
  2. Marinate the chicken: Slice each chicken breast in half lengthwise to create 4 thinner pieces. Add the chicken pieces to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes and up to 2 hours to allow flavors to penetrate the meat.
  3. Heat the grill pan: Remove the marinated chicken from the fridge. Heat a large grill pan over medium-high heat until hot enough to sizzle when chicken is added.
  4. Cook the chicken: Place the marinated chicken pieces in the grill pan in a single layer, cooking for 4-5 minutes on one side. Flip the chicken and cook for another 4-5 minutes until the internal temperature reaches 165°F (74°C), indicating the chicken is fully cooked and juicy.
  5. Garnish and serve: Remove the chicken from the pan and arrange on a serving platter. Sprinkle with fresh chopped parsley and dill, crumble feta cheese on top, and add grilled lemon slices for an extra burst of citrus flavor. Serve immediately.
