Ingredients

For the Burgers

  • 1 tablespoon avocado oil (plus 1-2 tablespoons more for cooking)
  • 3 cups loosely packed fresh spinach
  • 1 teaspoon minced garlic
  • 1 pound 97% lean ground turkey
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon dried basil
  • ½ teaspoon Kosher salt (or to taste)
  • ½ teaspoon ground black pepper
  • 1 large egg
  • ½ cup chopped sun dried tomatoes
  • ½ cup crumbled feta cheese


Instructions

  1. Sauté Spinach and Garlic: Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Add minced garlic and fresh spinach, cooking for about 3-4 minutes until the spinach is wilted. Remove from heat and transfer the spinach and garlic mixture to a small bowl or plate to cool slightly.
  2. Prepare Burger Mixture: In a large bowl, combine the ground turkey with garlic powder, oregano, dried basil, Kosher salt, and black pepper. Add the cooled spinach and garlic mixture to the bowl. Crack in the egg and stir. Then fold in the chopped sun dried tomatoes and crumbled feta cheese, mixing thoroughly by hand to evenly distribute all ingredients.
  3. Shape Patties: Scoop about ½ cup of the burger mixture for each patty. Shape the mixture into 4 large patties or 6 smaller ones, according to preference. Place the formed patties onto a baking sheet and chill in the refrigerator for 30 minutes to help them firm up and hold shape during cooking.
  4. Cook the Burgers: Heat 1-2 tablespoons of avocado oil in a large skillet over medium-high heat, or preheat a grill. Cook the patties for 5-6 minutes on each side, flipping only once, until the internal temperature reaches 165ºF and the burgers are cooked through. Remove from heat and let the burgers rest for 3-4 minutes before serving, which allows juices to redistribute for maximum flavor and moisture.
