  • 1 (8-ounce) wheel brie cheese
  • 1/2 cup fresh blackberries, halved

  • 1/2 teaspoon black pepper

Instructions

  1. Soak the Cedar Plank: Submerge the cedar plank in water for at least 30 minutes and up to 2 hours. Place it on a rimmed baking sheet and weigh it down with cans to keep it fully submerged. This prevents the wood from burning on the grill.
  2. Prepare the Baguette Slices: Slice the baguette diagonally into 1/2-inch-thick pieces. Brush both sides of each slice with the extra-virgin olive oil and sprinkle evenly with kosher salt. Set aside for grilling.
  3. Make the Blackberry Topping: In a medium bowl, combine the halved fresh blackberries, honey, balsamic vinegar, chopped fresh thyme, kosher salt, and black pepper. Mix gently and set aside to allow flavors to meld.
  4. Preheat the Grill: Prepare your grill for indirect grilling by lighting burners or coals on one side only and setting to medium heat. Allow the grill to reach approximately 350°F before proceeding.
  5. Precook the Cedar Plank: Place the soaked cedar plank directly over the grill heat for 3 minutes to begin releasing smoke and flavor, then flip and cook the other side for an additional 3 minutes. The edges will begin to blacken.
  6. Grill the Baguette Slices: While the plank cooks, place the prepared baguette slices over indirect heat (the cooler side of the grill) and grill for 2 to 3 minutes per side until golden and crisp. Remove and set aside.
  7. Cook the Brie: Transfer the wheel of brie cheese onto the preheated cedar plank over direct heat. Spoon the blackberry topping evenly over the brie. Close the grill lid and cook for 10 to 12 minutes, or until the brie is warmed through and soft but not melted completely. Gently poke to test; the center should feel liquid-y.
  8. Serve Immediately: Serve the grilled brie directly from the cedar plank with the grilled baguette slices on the side. Enjoy within 20 to 30 minutes while warm and soft. If needed, reheat gently in the microwave for 10 to 20 seconds to soften again.
