Description

A simple and flavorful grilled flank steak marinated in a garlicky apple cider vinegar mixture, perfect for a quick and delicious meal. The marinade tenderizes the meat while adding a zesty aroma, resulting in a juicy and tender steak grilled to perfection.

Ingredients

Flank Steak

  • pounds flank steak

Marinade

  • ¼ cup unfiltered apple cider vinegar
  • 2 tablespoons extra-virgin olive oil
  • 8 garlic cloves, minced (about 2 tablespoons)
  • 3 teaspoons kosher salt, divided
  • 2 teaspoons brown sugar (optional)
  • ½ teaspoon freshly cracked black pepper

Instructions

  1. Make the marinade: In a small bowl, whisk together the apple cider vinegar, olive oil, minced garlic, 2 teaspoons of kosher salt, and brown sugar if using, until all ingredients are well combined.
  2. Marinate the steak: Season the flank steak evenly with freshly cracked black pepper and the remaining 1 teaspoon salt. Place the steak in a 9 x 13-inch baking dish or a large zip-top bag. Pour the prepared marinade over the steak and turn it to coat thoroughly on both sides. Cover and refrigerate for at least 1 hour, and up to 4 hours, to allow the flavors to penetrate the meat.
  3. Preheat the grill: Heat your grill to medium-high. This ensures a good sear and keeps the steak juicy inside.
  4. Grill the steak: Remove the steak from the marinade, letting excess drip off. Discard the marinade. Place the steak on the grill and cook for 5 to 8 minutes per side for medium-rare doneness. Use an instant-read thermometer to check that the internal temperature reaches 135°F.
  5. Rest the steak: Transfer the grilled steak to a cutting board and let it rest for 5 minutes. Resting helps the juices redistribute, keeping the steak moist.
  6. Slice and serve: Using a sharp knife, slice the steak thinly against the grain at a diagonal. Arrange the slices on a serving platter and serve immediately.

Notes

  • Marinating for up to 4 hours helps maximize flavor and tenderness but do not exceed 4 hours to prevent the acid from toughening the meat.
  • Use an instant-read thermometer to ensure the steak is cooked to your preferred doneness safely.
  • For a sweeter marinade, the brown sugar is optional and can be omitted.
  • Slicing against the grain is crucial to ensure tender bites.
  • Letting the steak rest before slicing retains the juices.
