- Prepare Steaks: Take the ribeye steaks out of the refrigerator 30 to 45 minutes before grilling to bring them to room temperature. Pat them dry thoroughly and brush both sides evenly with olive oil. Generously sprinkle salt and black pepper on both sides and let them sit while you heat the grill.
- Set Up Grill: For charcoal grills, pile hot coals on one side to create a two-zone fire. For gas grills, turn one side of the burners to high and leave the other side off. Preheat the grill with the lid closed for about 10 minutes to reach high heat.
- Sear Steaks: Place the ribeye steaks on the hot side of the grill to sear. Cook for 2 to 3 minutes per side until nicely browned. If flare-ups occur, move steaks to the cooler side briefly and cover with the lid to let flames subside.
