Ingredients
Marinade
- ¼ cup extra-virgin olive oil
- ¼ cup fresh lemon juice
- 4 cloves garlic, minced
- 3 tablespoons honey
- 1 teaspoon kosher salt
- ½ teaspoon cayenne pepper
- 1 teaspoon paprika
Main
- 2 pounds jumbo shrimp, peeled and deveined
- Lemon wedges, for serving
- Wooden or metal skewers (if using wooden, soak in water for at least 30 minutes)
Instructions
- Soak Skewers: Soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
- Prepare Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, honey, kosher salt, cayenne pepper, and paprika. Reserve ¼ cup of the marinade for basting while grilling.
- Toss Shrimp: Add the 2 pounds of peeled and deveined jumbo shrimp to the marinade, toss gently to coat all shrimp evenly. Cover and refrigerate for 15 minutes up to 1 hour. Do not marinate longer than 60 minutes to avoid cooking the shrimp in the lemon juice.
- Preheat Grill: Preheat your grill or grill pan to medium-high heat, ensuring it’s hot before cooking.
- Skewer Shrimp: Thread the marinated shrimp onto the soaked skewers, leaving a little space between each shrimp for even cooking.
- Grill Shrimp: Place the shrimp skewers on the grill and cook for 2-3 minutes per side until shrimp are pink, opaque, and cooked through, brushing them with the reserved marinade before placing on the grill and again after flipping.
- Serve: Remove from grill and serve immediately with fresh lemon wedges for squeezing over the shrimp.

- Do not marinate shrimp longer than 1 hour to prevent the acid in lemon juice from cooking the shrimp.
