Description

A hearty and comforting Ground Beef and Potato Casserole layered with tender sliced potatoes, seasoned ground beef, and a creamy mushroom sauce, topped with melted cheese. Perfect for a satisfying family dinner, this casserole bakes to golden perfection with flavors that meld beautifully over 90 minutes in the oven.

Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 5-6 medium potatoes, thinly sliced
  • 1 medium onion, chopped

Soup Mixture

  • 1 can Cream of Mushroom soup
  • ½ cup beef broth
  • ¼ cup heavy whipping cream

Seasonings & Others

  • 1 teaspoon dried rosemary (or ½ teaspoon powdered rosemary)
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 cups shredded cheese

Instructions

  1. Preheat Oven: Set your oven to 350 degrees Fahrenheit to prepare for baking the casserole.
  2. Brown the Beef and Onion: In a skillet over medium heat, begin browning the ground beef. Halfway through, add the chopped onion and continue cooking until the beef is fully browned and onions are softened.
  3. Season the Meat: Drain excess grease from the skillet, then stir in salt, pepper, garlic powder, and rosemary to the meat mixture ensuring an even seasoning.
  4. Prepare Soup Mixture: In a separate bowl, whisk together the cream of mushroom soup, heavy cream, and beef broth until smooth and well combined.
  5. Layer the Casserole: Grease or line a 9×13 inch baking dish with parchment paper. Arrange half of the sliced potatoes evenly at the bottom. Pour and spread one-third of the soup mixture over the potatoes, then sprinkle half of the meat mixture on top. Repeat layering with the remaining potatoes, another third of the soup mixture, and remaining meat mixture. Drizzle the last third of soup mixture over the top layer of meat, then sprinkle half of the shredded cheese evenly over the surface.
  6. Bake Covered: Cover the dish tightly with foil and bake for approximately 90 minutes, or until the potatoes are tender when pierced with a fork.
  7. Add Final Cheese Layer: Remove the foil in the last 5 minutes of baking, sprinkle the remaining cheese over the casserole to melt and brown slightly.
  8. Rest Before Serving: Take the casserole out of the oven and let it rest for five minutes to set. This helps the layers hold together and enhances the flavors before serving.

Notes

  • To make layering easier, slice potatoes uniformly thin for even cooking.
  • Drain grease from the beef to avoid a greasy casserole.
  • Adjust seasoning to taste, especially salt and pepper depending on the saltiness of the soup and broth.
  • If using powdered rosemary, reduce quantity to avoid overpowering the dish.
  • Letting the casserole rest before serving improves sliceability and flavor melding.
