Description

This savory Ground Beef and Potatoes Skillet is the ultimate one-pan comfort food meal, perfect for busy weeknights. Tender potatoes and seasoned ground beef cook together with onions, spices, and a touch of melty cheddar for a dish that’s hearty, filling, and bursting with flavor. Easy to make and ready in under an hour, it’s a satisfying family favorite with minimal cleanup!

Ingredients

Beef Mixture

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Potatoes & Seasonings

  • 45 medium potatoes, thinly sliced
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste

Liquid & Garnishes

  • 1/2 cup beef broth or water
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat if needed.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the pan with the beef. Cook for 3-4 more minutes until the onion is soft and translucent, stirring frequently.
  3. Add Potatoes & Seasonings: Stir in the sliced potatoes. Sprinkle the paprika, garlic powder, Italian seasoning, salt, and pepper over the mixture. Toss thoroughly to coat the potatoes and beef evenly with all the seasonings.
  4. Simmer: Pour the beef broth (or water) into the skillet. Stir to combine, then cover and let it simmer over medium heat for 15-20 minutes, stirring occasionally, until the potatoes are fork-tender and cooked through.
  5. Add Cheese & Finish: If using, sprinkle the shredded cheddar cheese on top of the skillet mixture and cover for a few minutes until the cheese is melted.
  6. Garnish and Serve: Top with fresh chopped parsley if desired, and serve the skillet hot. Enjoy!

Notes

  • For a lighter meal, use lean ground beef or substitute with ground turkey.
  • Yukon gold or russet potatoes work best for this skillet meal.
  • Add extra vegetables, like bell peppers or spinach, for more nutrition.
  • Leftovers keep well in the fridge and reheat nicely for lunch the next day.
