Description

Delicious, crunchy Haystack Cookies combine creamy butterscotch and peanut butter chips with crunchy chow mein noodles and nuts, creating a no-bake treat that’s quick and easy to prepare.

Ingredients

Dry Ingredients

  • 2 cups butterscotch and/or peanut butter chips
  • 1 5-ounce package chow mein noodles
  • 1 cup cashews, peanuts, or other nuts

Wet Ingredients

  • 1/4 cup peanut butter

Instructions

  1. Prepare Baking Sheets: Line two baking sheets with waxed paper and set aside to ensure the cookies don’t stick after shaping.
  2. Melt Chips and Peanut Butter: In a large microwave-safe bowl, combine the butterscotch and/or peanut butter chips with the peanut butter.
  3. Microwave to Melt: Microwave the mixture at 50% power for 2 to 3 minutes, stirring every 30 seconds, until the mixture becomes smooth and creamy.
  4. Mix in Crunchy Elements: Add the chow mein noodles and your choice of nuts to the melted mixture, stirring gently until all pieces are evenly coated.
  5. Shape Cookies: Use a cookie scoop or spoon to drop portions of the mixture onto the waxed paper-lined baking sheets, forming small mound-shaped cookies.
  6. Chill to Set: Refrigerate the cookies for 15 minutes or until firm, then carefully peel them off the waxed paper and serve.

Notes

  • For a different flavor profile, you can use all butterscotch or all peanut butter chips, or a combination.
  • Any crunchy nut such as almonds or pecans can be substituted based on preference.
  • Chilling the cookies thoroughly ensures they hold their shape and are less sticky to handle.
  • Store leftovers in an airtight container in the refrigerator to keep them fresh.
  • This recipe requires no baking and is perfect for quick treats or last-minute snacks.
