Dry Ingredients
- 1 cup oat flour
- 1 cup old fashioned rolled oats
- ½ cup coconut sugar
- ½ teaspoon sea salt
Wet Ingredients
- 6 Tablespoons coconut oil (room temperature/solid)
- 2 Tablespoons water
Filling
- 2 cups blueberries (fresh or frozen)
- Zest of one lemon
- 1 Tablespoon arrowroot powder or cornstarch

Instructions
- Prep. Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking dish with parchment paper or spray it lightly with cooking spray to prevent sticking.
- Simmer blueberries. In a medium saucepan, combine the blueberries, lemon zest, water, and arrowroot powder. Heat over medium-high until it reaches a boil, then reduce to a simmer. Stir constantly for 3 to 5 minutes until the mixture thickens and some berries begin to pop, reaching a consistency that coats the back of a spoon without being runny. Remove from heat and set aside.
- Combine dry ingredients. In a medium mixing bowl, mix together the oat flour, rolled oats, coconut sugar, and sea salt until well combined.
- Form crumble. Add the coconut oil to the dry mixture. Use your hands or a spoon to mix until the mixture forms a crumbly texture.
- Add hemp hearts. Scoop out about 2/3 cup of the oatmeal crumble into a small bowl, add the hemp hearts to this portion, and mix them together thoroughly to create the topping.
- Add crumble to pan. Press the remaining oatmeal crumble evenly into the bottom of the prepared baking dish with your hands, forming a firm crust.
- Pour filling. Pour the thickened blueberry filling evenly over the crust.
- Add topping. Sprinkle the hemp heart oat crumble topping evenly over the blueberry filling.
- Bake. Place in the oven and bake for 35 to 40 minutes until the topping is golden brown and the blueberry filling is bubbling and sticky around the edges.
- Cool and serve. Remove from oven and cool completely on a wire rack. Once cooled, cut into 12 bars. Enjoy immediately or chill in the fridge for a firmer texture—it’s especially delicious served chilled.
