Ingredients

Dry Ingredients

  • 1 cup oat flour
  • 1 cup old fashioned rolled oats
  • ½ cup coconut sugar
  • ½ teaspoon sea salt

Wet Ingredients

  • 6 Tablespoons coconut oil (room temperature/solid)
  • 2 Tablespoons water

Filling

  • 2 cups blueberries (fresh or frozen)
  • Zest of one lemon
  • 1 Tablespoon arrowroot powder or cornstarch

Extras

  • 2 Tablespoons hemp hearts


Instructions

  1. Prep. Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking dish with parchment paper or spray it lightly with cooking spray to prevent sticking.
  2. Simmer blueberries. In a medium saucepan, combine the blueberries, lemon zest, water, and arrowroot powder. Heat over medium-high until it reaches a boil, then reduce to a simmer. Stir constantly for 3 to 5 minutes until the mixture thickens and some berries begin to pop, reaching a consistency that coats the back of a spoon without being runny. Remove from heat and set aside.
  3. Combine dry ingredients. In a medium mixing bowl, mix together the oat flour, rolled oats, coconut sugar, and sea salt until well combined.
  4. Form crumble. Add the coconut oil to the dry mixture. Use your hands or a spoon to mix until the mixture forms a crumbly texture.
  5. Add hemp hearts. Scoop out about 2/3 cup of the oatmeal crumble into a small bowl, add the hemp hearts to this portion, and mix them together thoroughly to create the topping.
  6. Add crumble to pan. Press the remaining oatmeal crumble evenly into the bottom of the prepared baking dish with your hands, forming a firm crust.
  7. Pour filling. Pour the thickened blueberry filling evenly over the crust.
  8. Add topping. Sprinkle the hemp heart oat crumble topping evenly over the blueberry filling.
  9. Bake. Place in the oven and bake for 35 to 40 minutes until the topping is golden brown and the blueberry filling is bubbling and sticky around the edges.
  10. Cool and serve. Remove from oven and cool completely on a wire rack. Once cooled, cut into 12 bars. Enjoy immediately or chill in the fridge for a firmer texture—it’s especially delicious served chilled.
