Beef and Marinade

- 3 tablespoons water (to dissolve cornstarch)

Instructions
- Season the beef: Pat the beef dry with paper towels. Season all sides generously with kosher salt and fresh cracked pepper to build flavor before searing.
- Sear the beef: Heat olive oil in a large sauté pan or Dutch oven over medium-high heat. Add the beef pieces and sear for 2–3 minutes per side until browned. Cook in batches if needed to avoid overcrowding. Note that beef won’t be cooked through at this stage. Remove beef and set aside.
- Sauté onions: In the same pan, melt the butter. Add diced onion along with a pinch of salt and pepper. Reduce heat to medium and cook the onions for about 4 minutes, stirring occasionally until softened and translucent.
- Add garlic: Add minced garlic to the pan and cook for another minute, stirring frequently to release the aroma without burning.
- Create the sauce and simmer beef: Pour in 2 cups of beef broth along with Worcestershire sauce, soy sauce, and Italian seasoning. Return the seared beef and any accumulated juices back to the pan. Cover, reduce heat to low, and let everything simmer gently for 25–30 minutes until the beef becomes tender.
- Thicken the sauce: Dissolve the cornstarch in 3 tablespoons of water to form a slurry. Stir this into the pan and cook for an additional 3–4 minutes until the sauce thickens to your preferred consistency. If sauce is too thick, add a little more beef broth to thin it as needed.
