Instructions

  1. Brown the Beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook, crumbling with a spatula, until browned and cooked through.
  2. Sauté Onion: Add diced onion and a couple pinches of salt and pepper and cook, stirring occasionally for 4 minutes, until softened.
  3. Add Aromatics and Seasoning: Stir in minced garlic, tomato paste, and Italian seasoning. Cook for another minute, stirring frequently to develop flavors.
  4. Simmer Potatoes and Broth: Add diced potatoes, beef stock, Worcestershire sauce, balsamic vinegar, and a couple pinches of salt and pepper. Bring to a simmer and gently cook for 15 minutes until potatoes begin to soften.
  5. Thicken and Add Veggies: Dissolve cornstarch in 2 tablespoons of water to make a slurry. Stir in the slurry with frozen peas and carrots along with salt and pepper. Continue gently simmering for another 10 minutes until everything is tender and stew has thickened slightly.
