Description

These Homemade Butterfinger Bars are a delightful no-bake treat combining the crunch of cornflakes with creamy peanut butter and a rich chocolate coating. Ingredients

Base Mixture

  • 3 cups crushed cornflakes
  • 1 1/2 cup natural (unsweetened) crunchy peanut butter
  • 1/2 cup agave, maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/3 cup granulated sugar, coconut sugar, or sugar alternative
  • 1/2 teaspoon salt

Chocolate Coating

  • 12 oz dark or semisweet chocolate
  • 2-3 teaspoons coconut oil


Instructions

  1. Prepare the Peanut Butter Mixture: In a large mixing bowl, whisk together peanut butter, agave (or maple syrup/honey), vanilla extract, sugar, and salt until smooth and well combined.
  2. Combine with Cornflakes: Add the crushed cornflakes to the peanut butter mixture and stir thoroughly until all cornflakes are evenly coated and the mixture becomes sticky.
  3. Set the Base: Line an 8×8-inch pan with parchment paper. Spread the cornflake and peanut butter mixture evenly into the pan. Place the pan in the freezer for 4 hours or overnight to firm up the mixture.
  4. Slice the Bars: Remove the set mixture from the pan and slice into 18 rectangular bars. Return the bars to the freezer immediately. For best chocolate coating results, allow them to chill for another 30-60 minutes before coating.
  5. Melt the Chocolate: In a double boiler or microwave (heating in 30-second intervals and stirring between each), melt the chocolate along with coconut oil until smooth and fully melted.
  6. Coat the Bars: Using two forks, dip and coat each bar thoroughly in the melted chocolate. Allow excess chocolate to drip back into the bowl to prevent thick coating.
  7. Firm the Chocolate: Place the coated bars on a parchment paper-lined tray and return them to the freezer for 30 minutes to let the chocolate harden completely.
