Description

Homemade Chicken Spiedies are a flavorful marinated chicken skewer sandwich featuring tender chicken thighs soaked in a zesty marinade with garlic, oregano, and red wine vinegar, grilled to juicy perfection, and served with caramelized onions on a gluten-free ciabatta bun. This recipe is perfect for a quick yet delicious meal with vibrant Mediterranean-inspired flavors.

Ingredients

Chicken and Marinade

  • 1 ½ pounds boneless, skinless chicken thighs or breasts
  • 1 sweet onion, sliced into half-moon slices
  • 6 cloves garlic, smashed
  • ½ cup avocado oil
  • Juice of 1 lemon
  • ¾ cup red wine vinegar
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 teaspoons dried oregano
  • 3 bay leaves
  • 1 teaspoon salt
  • ¼ teaspoon pepper

Other

  • Gluten-free ciabatta buns
  • Wooden or metal skewers (soaked in water for at least 20 minutes)
  • Avocado or olive oil spray for cooking

Instructions

  1. Prepare the Chicken and Marinade: Add the chicken pieces, sliced onions, and smashed garlic to an airtight container or sealable plastic bag.
  2. Make the Marinade: In a separate bowl, whisk together avocado oil, lemon juice, red wine vinegar, onion powder, garlic powder, dried oregano, bay leaves, salt, and pepper until well combined.
  3. Marinate: Pour the marinade mixture over the chicken and onion mixture, ensuring everything is well coated. Seal the container or bag and refrigerate overnight for best flavor.
  4. Soak Skewers: Before cooking, soak your skewers in water for at least 20 minutes to prevent them from burning on the grill pan.
  5. Heat Grill Pan: Place a grill pan on medium-high heat and let it warm up adequately.
  6. Prepare the Pan: Spray the grill pan lightly with avocado or olive oil spray to prevent sticking.
  7. Skewer and Cook Chicken: Thread the marinated chicken pieces onto the soaked skewers. Place the skewers on the preheated grill pan and cook each side for 4 to 5 minutes, until the chicken is cooked through and has nice grill marks.
  8. Remove Skewers and Reduce Heat: Take the skewers off the pan and lower the heat to medium to prepare for the onions.
  9. Caramelize Onions: Add the marinated onion slices to the pan and cook for 10 to 12 minutes, stirring occasionally, until they are soft and browned.
  10. Assemble the Sandwich: Place the cooked chicken skewers on gluten-free ciabatta buns, top generously with the caramelized onions, and serve immediately for a delicious meal.

Notes

  • Marinating the chicken overnight is key to achieving tender, flavorful meat.
  • Soaking skewers prevents them from burning when cooking with direct heat.
  • Use boneless, skinless chicken thighs for juicier results, but breasts can be used if preferred.
  • Caramelizing the onions adds a sweet depth of flavor to complement the tangy chicken marinade.
  • Serve with gluten-free ciabatta or your preferred gluten-free bread for a complete sandwich.
