Ingredients

Sausage Mixture

  • 1 lb ground breakfast turkey sausage

Batter

  • 2 eggs
  • 1.5 cups almond milk (or milk of choice)
  • 1.5 cups shredded cheddar cheese
  • 2 tbsp maple syrup (plus extra for serving, if desired)
  • Avocado oil spray (for greasing muffin tin)


Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to warm up while you prepare the ingredients.
  2. Cook the Sausage: In a skillet over medium heat, cook the ground turkey sausage for 5-7 minutes. Use a wooden spoon to break it up into small pieces as it cooks. Once done, drain any excess fat and transfer the cooked sausage to a large mixing bowl.
  3. Mix the Batter: To the bowl with sausage, add the gluten-free protein pancake mix, eggs, almond milk, shredded cheddar cheese, and maple syrup. Stir all the ingredients together until well combined into a thick batter.
  4. Prepare Muffin Tin: Lightly spray a 12-cup muffin tin with avocado oil to prevent sticking. Evenly divide the batter into each muffin cup, filling them to the top.
