Ingredients
Sausage Mixture
- 1 lb ground breakfast turkey sausage
Batter
- 2 cups gluten free protein pancake mix (King Arthur Baking brand recommended)
- 2 eggs
- 1.5 cups almond milk (or milk of choice)
- 1.5 cups shredded cheddar cheese
- 2 tbsp maple syrup (plus extra for serving, if desired)
- Avocado oil spray (for greasing muffin tin)
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) to warm up while you prepare the ingredients.
- Cook the Sausage: In a skillet over medium heat, cook the ground turkey sausage for 5-7 minutes. Use a wooden spoon to break it up into small pieces as it cooks. Once done, drain any excess fat and transfer the cooked sausage to a large mixing bowl.
- Mix the Batter: To the bowl with sausage, add the gluten-free protein pancake mix, eggs, almond milk, shredded cheddar cheese, and maple syrup. Stir all the ingredients together until well combined into a thick batter.
- Prepare Muffin Tin: Lightly spray a 12-cup muffin tin with avocado oil to prevent sticking. Evenly divide the batter into each muffin cup, filling them to the top.
- Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes. The muffins should puff up and be cooked through when done—check with a toothpick if unsure.
- Cool and Serve: Allow the muffins to cool in the tin for about 10 minutes. Remove them carefully and enjoy warm, optionally drizzling extra maple syrup on top for added sweetness.
Notes
- For a dairy-free option, substitute cheddar cheese with a plant-based cheese and use a non-dairy milk like almond milk.
- You can swap ground turkey sausage for pork sausage or a plant-based sausage to suit preferences.
- Batch these muffins ahead of time and refrigerate or freeze for easy breakfasts throughout the week.
- Adjust the amount of maple syrup to your taste, adding more to the batter or serving on top.
