Panna Cotta

- 1 tablespoon unflavored powdered gelatin

Strawberry Topping
- 10 to 12 strawberries, thinly sliced

Instructions
- Bloom gelatin: Place the water in a small wide dish and sprinkle the unflavored gelatin evenly over the surface. Let it sit undisturbed for 5 minutes to allow the gelatin to soften and dissolve.
- Warm cream mixture: In a pot over medium-high heat, combine the heavy cream, whole milk, and ¼ cup honey or maple syrup. Slowly heat the mixture, stirring occasionally, until small bubbles appear around the edges, just before it reaches boiling point. Remove from heat.
- Add flavorings and gelatin: Stir in the vanilla extract and a pinch of kosher salt into the warm cream mixture. Then add the bloomed gelatin and whisk continuously until the gelatin is fully dissolved with no lumps remaining.
- Chill panna cotta: Pour the hot cream mixture evenly into six 4-ounce ramekins. Cover each ramekin with plastic wrap and refrigerate for at least 4 to 6 hours, preferably overnight, until fully set and firm.
- Macerate strawberries: In a bowl, combine the thinly sliced strawberries with 2 tablespoons honey or maple syrup. Stir gently to coat, cover the bowl, and refrigerate for 30 minutes to 1 hour to allow the strawberries to release their juices and sweeten.
- Unmold panna cotta: When ready to serve, remove the ramekins from the fridge and run a small knife around the edges to loosen the dessert. Optionally, dip the bottoms of the ramekins in hot tap water for a few seconds to loosen the panna cotta further. Invert each ramekin carefully onto individual dessert plates.
- Serve with strawberries: Spoon the macerated strawberries with their juices over the top of each panna cotta and serve immediately for a fresh and elegant dessert presentation.
