Perfect for parties, gatherings, or a quick appetizer, each cup features a balanced assortment of cured meats, cheeses, fresh and dried fruits, nuts, and pickled vegetables, arranged artfully for both taste and presentation.


Ingredients

Meats

  • 3 ounces salami (thinly sliced)
  • 3 ounces dry-cured sausage

Fruits

  • 1 cup seedless grapes
  • ½ cup blueberries
  • ½ cup dried cranberries
  • 6 dried apricots

Vegetables and Pickles

  • 18 pickled pearl onions
  • 18 green olives (pitted or stuffed)

Cheese

  • 2 blocks cheese (7-ounce each, diced or cut into wedges)

Nuts

  • ½ cup almonds
  • ½ cup pistachios

Crackers

  • 6 crackers or breadsticks


Instructions

  1. Dry any wet foods: Rinse the grapes and blueberries under cool water and then pat them dry carefully with a paper kitchen towel. Drain the pickled pearl onions and green olives, patting them dry as much as possible to avoid excess moisture in the cups.
  2. Make skewers: Thread 3 to 4 slices of salami onto toothpicks or cocktail sticks to create 6 salami skewers. Repeat this with the dry-cured sausage to make another 6 skewers. For variety, you may also combine slices of both meats on one skewer.
  3. Prepare pickle skewers: Thread olives and pickled pearl onions onto toothpicks, either mixed or separately, making at least 2 pickle skewers per glass to add tangy, savory notes.
  4. Cut the cheese: Slice the cheese blocks into bite-sized cubes or wedges. Smaller pieces fit better into the cups and make them easier to eat.
  5. Assemble the cups: Start each glass by placing one dried apricot at the bottom. Add a handful of almonds and pistachios, followed by about 4 grapes and several cubes of cheese. Fill any spaces with dried cranberries and blueberries to add color and sweetness. Top each cup with the prepared meat and pickle skewers, a slice of cheese on top, and finish with crackers or breadsticks as a crunchy side.
