Description

A creamy and comforting Instant Pot Rice Pudding recipe that combines rice, milk, raisins, cinnamon, and star anise for a fragrant and delicious dessert made effortlessly with pressure cooking.

Ingredients

Dry Ingredients

  • 1 cup uncooked rice
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup raisins
  • Pinch of salt

Wet Ingredients

  • 2 cups milk
  • 1 cup water
  • 1 tablespoon unsalted butter

Spices

  • 1 star anise (optional)

Instructions

  1. Combine Ingredients: In the inner pot of your Instant Pot pressure cooker, combine the rice, milk, water, sugar, star anise, ground cinnamon, raisins, and a pinch of salt.
  2. Mix Well: Stir the mixture thoroughly to ensure the sugar and cinnamon are well distributed without any lumps.
  3. Pressure Cook: Close and lock the lid of the Instant Pot. Press the MANUAL (pressure cooking) button and set the cooking time to 5 minutes.
  4. Pressure Release: After the cooking cycle ends, let the pressure release naturally for 7 minutes before manually releasing any remaining pressure.
  5. Finish and Serve: Once the lid is safely open, stir the pudding well, then mix in the butter. Taste and add extra sweetener if desired. Serve warm or chilled and enjoy!

Notes

  • Use short or medium grain rice for creamier pudding; long grain rice may be less creamy.
  • The star anise adds a subtle aromatic flavor but can be omitted if unavailable.
  • For a richer pudding, substitute whole milk or add a splash of cream.
  • Store leftovers in the refrigerator for up to 3 days and reheat gently before serving.
  • Adjust sweetness to taste, adding honey or maple syrup as alternatives to sugar.
