Ingredients
Chocolate Mixture
- ½ cup heavy cream (90 milliliters)
- 2 cups chocolate chips (14 ounces/400 grams)
- 4 tablespoons Irish cream liqueur
Coating
- 3 ounces green sprinkles (90 grams)
Instructions
- Melt Chocolate: In a heat-proof bowl set over a pot of simmering water (double boiler method), combine the heavy cream and chocolate chips. Stir continuously until the chocolate chips have completely melted and the mixture is smooth.
- Add Irish Cream: Stir in the Irish cream liqueur until fully incorporated and the mixture is smooth and glossy.
- Chill Mixture: Allow the chocolate mixture to cool at room temperature for about 30 minutes, then cover it with plastic wrap and refrigerate for 1 hour or until the mixture is firm enough to handle.
- Scoop Mixture: Once chilled and firm, use the smallest cookie dough scoop, filling it about two-thirds full, to portion out the chocolate mixture onto a large tray or a chopping board lined with baking parchment.
- Roll into Balls: Wearing gloves, gently roll each scoop of the chocolate mixture into smooth balls.
- Coat with Sprinkles: Roll each ball in the green sprinkles until fully coated.
- Final Chill: Place the coated truffles back into the refrigerator to chill further before serving. This helps them hold their shape and keeps them cool for the best texture.
