Ingredients

Chocolate Mixture

  • ½ cup heavy cream (90 milliliters)
  • 2 cups chocolate chips (14 ounces/400 grams)
  • 4 tablespoons Irish cream liqueur

Coating

  • 3 ounces green sprinkles (90 grams)


Instructions

  1. Melt Chocolate: In a heat-proof bowl set over a pot of simmering water (double boiler method), combine the heavy cream and chocolate chips. Stir continuously until the chocolate chips have completely melted and the mixture is smooth.
  2. Add Irish Cream: Stir in the Irish cream liqueur until fully incorporated and the mixture is smooth and glossy.
  3. Chill Mixture: Allow the chocolate mixture to cool at room temperature for about 30 minutes, then cover it with plastic wrap and refrigerate for 1 hour or until the mixture is firm enough to handle.
  4. Scoop Mixture: Once chilled and firm, use the smallest cookie dough scoop, filling it about two-thirds full, to portion out the chocolate mixture onto a large tray or a chopping board lined with baking parchment.
  5. Roll into Balls: Wearing gloves, gently roll each scoop of the chocolate mixture into smooth balls.
  6. Coat with Sprinkles: Roll each ball in the green sprinkles until fully coated.
  7. Final Chill: Place the coated truffles back into the refrigerator to chill further before serving. This helps them hold their shape and keeps them cool for the best texture.
