Ingredients

Meat Mixture

  • 1 Tbsp. grass fed butter, plus a bit for greasing your pan
  • 1 lb ground red meat (beef, venison, or bison)
  • 1 Tbsp. chili powder
  • ¾ tsp. salt
  • ½ tsp. pepper
  • 16 oz salsa (about a full jar, use your favorite)
  • 1 can black beans
  • 1, 10 oz. bag frozen cauliflower

Toppings

  • 2 cups plain Greek yogurt
  • 1 cup diced tomatoes
  • ½ cup sliced green onions
  • 1½ cups grated cheddar or pepper jack cheese (preferably raw cheddar)
  • 1 cup crushed tortilla chips, for serving (Siete Foods recommended)


Instructions

  1. Preheat and Prepare Dish. Preheat your oven to 375°F. Grease a 9×13-inch baking dish with a bit of softened grass fed butter to prevent sticking.
  2. Brown the Meat. In a large skillet over medium heat, melt the butter until it bubbles. Add the ground meat and cook for about 5-7 minutes, stirring occasionally until browned and cooked through.
  3. Add Seasonings and Vegetables. Stir in chili powder, salt, pepper, salsa, black beans, and frozen cauliflower rice. Cook the mixture, allowing it to simmer and reduce for about 8 to 10 minutes, letting flavors meld and excess moisture evaporate.
  4. Assemble the Casserole. Transfer the meat and vegetable mixture evenly into the prepared baking dish, spreading it out as the base layer.
  5. Add Toppings and Bake. Evenly spread the plain Greek yogurt over the meat layer. Sprinkle diced tomatoes and sliced green onions on top, then cover everything with the grated cheddar or pepper jack cheese. Place the casserole in the oven and bake for 25-30 minutes until hot, bubbly, and cheese is melted.
