This King Ranch Chicken Casserole is a comforting, cheesy Texas-style casserole layered with shredded rotisserie chicken, creamy soups, tangy Rotel tomatoes with green chilies, sour cream, and seasoned with taco spices. Torn corn tortillas create a hearty, satisfying base, baked until bubbly and golden. Garnished with fresh cilantro and green onion, this dish is perfect for family dinners or potlucks, offering bold flavors and a rich, creamy texture.

Ingredients

Main Ingredients

  • 3 cups shredded rotisserie chicken
  • 2 (10.5 ounce) cans cream of chicken soup
  • 1 (10 ounce) can Rotel tomatoes with green chilies
  • 1 cup full-fat sour cream
  • 1 packet taco seasoning
  • 12 corn tortillas, torn into pieces
  • 8 ounces shredded Colby jack cheese

Garnish

  • Fresh chopped cilantro, for garnish
  • Thinly sliced green onion, for garnish

Seasoning

  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
  2. Mix Filling: In a large bowl, combine the shredded rotisserie chicken, cream of chicken soup, Rotel tomatoes with green chilies (undrained), full-fat sour cream, taco seasoning, and add a couple of large pinches of kosher salt and fresh cracked pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Prepare Baking Dish: Lightly grease a 9×13-inch baking dish with cooking spray or oil to prevent sticking.
  4. Layer Tortillas and Filling: Place half of the torn corn tortilla pieces evenly into the bottom of the greased baking dish. Spread half of the chicken mixture over the tortillas, then sprinkle half of the shredded Colby jack cheese on top.
  5. Layer Remaining Ingredients: Add the remaining torn tortilla pieces on top of the first layer, followed by the remaining chicken mixture. Finish by sprinkling the remaining shredded cheese evenly over the top.
  6. Bake Casserole: Bake in the preheated oven for 30 to 35 minutes, or until the cheese is melted, bubbly, and the edges are golden brown.
  7. Rest and Garnish: Remove the casserole from the oven and let it rest for 5 minutes to set. Garnish with freshly chopped cilantro and thinly sliced green onion before serving.
  8. Serve and Enjoy: Serve warm and enjoy this hearty, flavorful King Ranch Chicken Casserole. For feedback, leave a 5-star rating and review!

Notes

  • You can use homemade shredded chicken if you prefer, but rotisserie chicken adds great flavor and convenience.
  • Be sure to lightly grease the baking dish to prevent sticking and make cleanup easier.
  • The casserole can be assembled a day ahead and refrigerated; just add 5–10 extra minutes to baking time if starting cold.
  • For a spicier version, add diced jalapeños or use a spicy Rotel variety.
  • This casserole freezes well—freeze before baking, then thaw overnight and bake as directed.
