Ingredients
Pancake Batter
- 1 cup Kodiak Power Cakes Mix (can replace with normal flour)
- 1 cup unsweetened almond milk or milk of choice
- 6 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- 2 tablespoons butter
Toppings (Optional)
- Fresh berries or other fresh fruit
- Maple syrup
- Brown sugar or powdered sugar
- Whipped cream
Instructions
- Preheat oven: Set your oven to 425 degrees Fahrenheit to prepare for baking the German pancakes.
- Prepare batter: In a blender, combine Kodiak Power Cakes mix (or regular flour), almond milk, eggs, vanilla extract, and kosher salt. Blend for about 20 seconds until the mixture is smooth and free of lumps.
- Melt butter in baking dish: Place butter in the bottom of a 9×13-inch baking dish. Put the dish in the oven for 2 minutes until the butter is completely melted.
- Spread butter evenly: Carefully remove the hot baking dish and gently rock it back and forth to coat the bottom evenly with melted butter.
- Add batter to dish: Pour the blended pancake batter into the buttered baking dish, spreading it out evenly across the bottom.
- Bake the pancakes: Return the baking dish to the oven and bake for 16-20 minutes or until the pancake is set in the center and the edges are golden brown.
- Serve and garnish: Remove from oven, slice, and serve warm with your choice of fresh berries, maple syrup, brown sugar, powdered sugar, or whipped cream.
Notes
- Use Kodiak Power Cakes mix for extra protein, or substitute with regular flour if preferred.
- Almond milk can be replaced with any milk of your choice based on dietary preference.
- Ensure the baking dish is properly buttered to prevent sticking and add flavor.
- Baking time may vary slightly depending on your oven, so keep an eye on the edges for a golden brown color.
- Experiment with toppings to customize the pancake to your taste.
