Description

This Kodiak Cakes German Pancakes recipe is a delicious twist on the classic German pancake, using Kodiak Power Cakes mix for a protein-packed, fluffy batter. Baked in the oven to golden perfection, these pancakes are topped with your choice of fresh berries, maple syrup, or whipped cream, making them a perfect hearty breakfast for family and friends.

Ingredients

Pancake Batter

  • 1 cup Kodiak Power Cakes Mix (can replace with normal flour)
  • 1 cup unsweetened almond milk or milk of choice
  • 6 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 2 tablespoons butter

Toppings (Optional)

  • Fresh berries or other fresh fruit
  • Maple syrup
  • Brown sugar or powdered sugar
  • Whipped cream

Instructions

  1. Preheat oven: Set your oven to 425 degrees Fahrenheit to prepare for baking the German pancakes.
  2. Prepare batter: In a blender, combine Kodiak Power Cakes mix (or regular flour), almond milk, eggs, vanilla extract, and kosher salt. Blend for about 20 seconds until the mixture is smooth and free of lumps.
  3. Melt butter in baking dish: Place butter in the bottom of a 9×13-inch baking dish. Put the dish in the oven for 2 minutes until the butter is completely melted.
  4. Spread butter evenly: Carefully remove the hot baking dish and gently rock it back and forth to coat the bottom evenly with melted butter.
  5. Add batter to dish: Pour the blended pancake batter into the buttered baking dish, spreading it out evenly across the bottom.
  6. Bake the pancakes: Return the baking dish to the oven and bake for 16-20 minutes or until the pancake is set in the center and the edges are golden brown.
  7. Serve and garnish: Remove from oven, slice, and serve warm with your choice of fresh berries, maple syrup, brown sugar, powdered sugar, or whipped cream.

Notes

  • Use Kodiak Power Cakes mix for extra protein, or substitute with regular flour if preferred.
  • Almond milk can be replaced with any milk of your choice based on dietary preference.
  • Ensure the baking dish is properly buttered to prevent sticking and add flavor.
  • Baking time may vary slightly depending on your oven, so keep an eye on the edges for a golden brown color.
  • Experiment with toppings to customize the pancake to your taste.
