Crust
- 30 Golden Oreos
- 8 tablespoons unsalted butter, melted
Blueberry Cream Cheese Layer
- 16 ounces frozen blueberries, thawed and drained
- 2 (8-ounce) packages cream cheese, room temperature
- 1/4 cup sour cream
- 1 cup powdered sugar
- 8 ounces whipped topping, thawed (half of 2 containers)
Lemon Pudding Layer
- 2 (3.4-ounce) packages instant lemon pudding mix
- 3 cups cold milk
Top Layer and Garnish
- 8 ounces whipped topping, thawed (remaining half)
- 2 (4-ounce) bars white chocolate, shaved
Instructions
- Prepare the crust: Using a food processor, crush the Golden Oreos into fine crumbs. While running the processor at low speed, slowly pour in the melted butter until the crumbs are well-coated. Firmly press the crumb mixture into the bottom of a 13×9-inch or 3-quart baking dish. Place the crust in the freezer to set for 20 minutes.
- Chop the blueberries: While the crust chills, place the thawed blueberries in the food processor and pulse a few times until they are roughly chopped. Set aside.
- Make the blueberry cream cheese layer: In a large bowl, use an electric hand mixer to beat the cream cheese, sour cream, and powdered sugar until smooth and creamy. Fold in 8 ounces of the thawed whipped topping. Using a slotted spoon, add the chopped blueberries and about 2 to 3 tablespoons of the blueberry juice to the cream cheese mixture, then gently mix until evenly distributed.
- Prepare the lemon pudding: In a separate medium bowl, whisk together the instant lemon pudding mix and cold milk until the mixture begins to thicken. Allow it to rest for 2 to 3 minutes until it is very thick.
- Assemble the layers: Spread the blueberry cream cheese mixture evenly over the chilled Oreo crust. Next, spread the thickened lemon pudding over the cream cheese layer. Then, spread the remaining 8 ounces of whipped topping evenly over the lemon pudding layer.
- Add garnish and chill: Sprinkle the shaved white chocolate over the top of the dessert. Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
- Serve: Once chilled, slice the Lemon Blueberry Lush into 12 servings and enjoy chilled.
