Description

This Lemon Rosemary Chicken Thighs recipe features succulent boneless, skinless chicken thighs seasoned with fresh rosemary, lemon, garlic, and honey, then baked to tender perfection. A simple yet flavorful dish perfect for a weeknight dinner or a cozy family meal.

Ingredients

Chicken and Seasonings

  • 28 ounces boneless skinless chicken thighs
  • 1 teaspoon fine salt
  • ⅛ teaspoon black pepper (or to taste)
  • 4 sprigs fresh rosemary

Vegetables and Aromatics

  • 1 small onion (thinly sliced)
  • 1 garlic clove (pressed)
  • ½ lemon (sliced thinly and juiced)

Liquids and Oils

  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • ½ cup chicken stock
  • ½ lemon (for juice and slices)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
  2. Prepare Rosemary and Lemon: Strip the leaves from one rosemary sprig and finely chop them. Slice half a lemon into thin rounds and juice the other half for fresh lemon flavor.
  3. Season Chicken: Place the boneless chicken thighs in a 9×13 inch (23×33 cm) baking dish. Season both sides evenly with salt, black pepper, and the chopped rosemary leaves.
  4. Add Aromatics and Flavorings: Add the thinly sliced onion, pressed garlic, olive oil, honey, and freshly squeezed lemon juice to the dish. Use kitchen tongs to toss and coat the chicken and onions evenly with all ingredients.
  5. Arrange Lemon and Rosemary: Tuck the lemon slices and the remaining rosemary sprigs under and around the chicken thighs for added flavor while baking.
  6. Bake Chicken: Bake in the preheated oven for about 30 minutes, or until the chicken is tender and the internal temperature reaches between 175-185°F (79-85°C).
  7. Optional Broil: For a browned top, broil the chicken for an additional 2-3 minutes, watching closely to avoid burning.
  8. Serve: Remove from oven and serve the chicken thighs with your choice of sides. Enjoy the bright, herby, and savory flavors!

Notes

  • Use a meat thermometer to check the internal temperature for perfectly cooked chicken thighs.
  • Chicken stock can be substituted with vegetable stock or water if preferred.
  • Broiling is optional but adds a nice caramelized finish to the dish.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
