  • 2 large eggs
  • 2 egg yolks
  • 200 g caster (superfine) sugar (1 cup / 7oz)
  • ½ cup fresh lime juice
  • 1 tablespoon lime zest
  • 150 g unsalted butter, cubed and cold (1 stick + 2 ½ tablespoons)


Instructions

  1. Combine Ingredients: In a medium saucepan, whisk together the whole eggs, egg yolks, caster sugar, fresh lime juice, and lime zest until well blended.
  2. Heat Mixture: Place the saucepan over low-medium heat and stir constantly until the sugar has completely dissolved.
  3. Add Butter: Add the cold, cubed butter a few pieces at a time, stirring continuously and allowing each addition to melt fully and incorporate into the mixture.
  4. Thicken the Curd: Continue to cook the mixture for 4-5 minutes, stirring constantly, until it thickens enough to coat the back of a spoon or leaves a thick coating on the side of the pan when tilted.
  5. Store: Pour the finished lime curd into sterilised conserve jars and let it cool before storing it in the refrigerator.
