Description

This Lime Jello Salad is a refreshing and creamy dessert perfect for gatherings and potlucks. Combining lime-flavored gelatin with creamy softened cream cheese, bubbly 7-Up, crushed pineapple, and whipped topping, it’s chilled to set into a light and fluffy salad. Garnished with whipped cream and maraschino cherries, this vibrant salad offers a delightful balance of tartness and sweetness with a smooth, airy texture.

Ingredients

Jello Mixture

  • 2 Cups boiling water
  • 1 Box lime jello (6-Ounce)

Cream Cheese Mixture

  • 8 Ounces cream cheese (softened)
  • 1 Cup 7-Up or Sprite
  • 1 Can crushed pineapple (20-Ounce, drained)
  • 8 Ounces whipped topping (thawed)

Other

  • Nonstick cooking spray (as needed)
  • Whipped cream, for topping
  • Maraschino cherries, for garnish

Instructions

  1. Prepare the baking dish: Spray a 9 x 13-inch baking dish lightly with nonstick cooking spray to prevent sticking, then set it aside for later pooling of the salad.
  2. Dissolve the lime jello: In a medium mixing bowl, combine the lime jello powder with 2 cups of boiling water. Whisk thoroughly until all the powder has completely dissolved, ensuring no granules remain. Let this mixture cool for about 10 minutes to avoid curdling the cream cheese in the next step.
  3. Beat the cream cheese: Place the softened cream cheese into a stand mixer fitted with a paddle attachment. Beat on medium speed for about 2 minutes until the cream cheese is smooth and creamy with no lumps. Scrape down the sides of the bowl as needed.
  4. Combine jello and cream cheese: Slowly add the cooled jello mixture to the cream cheese while mixing on low speed. Mix just until combined.
  5. Add soda and pineapple: Pour in the cup of 7-Up (or Sprite) and continue mixing until the mixture is mostly smooth with minimal lumps. Then add the drained crushed pineapple and stir until evenly incorporated.
  6. Fold in whipped topping: Gently fold the 8 ounces of thawed whipped topping into the jello mixture until the salad is smooth and fluffy, taking care not to deflate the topping.
  7. Chill the salad: Pour the completed mixture into the prepared baking dish, cover tightly with plastic wrap, and refrigerate overnight or for at least 4 hours to allow the salad to set properly.
  8. Garnish and serve: Before serving, optionally top the salad with dollops of whipped cream and maraschino cherries for an attractive, festive presentation.

Notes

  • Ensure the cream cheese is fully softened to avoid lumps in the salad.
  • Cooling the dissolved jello before adding to cream cheese prevents curdling or lumps.
  • Use chilled whipped topping and soda to maintain the salad’s light texture.
  • Drain the crushed pineapple well to avoid excess liquid in the salad.
  • The salad needs at least 4 hours to set, but overnight chilling is best for firm texture.
  • This recipe works great as a make-ahead dessert for parties and potlucks.
