Meatloaf

  • 2 lbs. ground beef (90/10 mix)
  • 3/4 cup unflavored breadcrumbs (dry)
  • 3/4 cup beef broth
  • 1 envelope Lipton Beefy Onion Soup mix (dry, unprepared)
  • 2 eggs
  • 1/3 cup ketchup
  • 8 slices Swiss cheese

Caramelized Onions

  • 1 1/2 cups yellow onions, sliced (about 2 medium onions)
  • 2 Tablespoons olive oil


Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and lightly spray it with non-stick cooking spray to prevent sticking. Set aside.
  2. Mix Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, unflavored breadcrumbs, beef broth, Lipton Beefy Onion Soup mix (dry), eggs, and ketchup. Use a rubber scraper or spatula to mix all ingredients together until well incorporated. The mixture will be thick and sticky.
  3. Shape the Meatloaf: Transfer the meat mixture onto the prepared baking sheet. Shape it into a loaf approximately 10 inches long and 4 inches wide. Precise measurements are not critical here.
  4. Bake the Meatloaf: Place the meatloaf in the preheated oven and bake uncovered for 60 minutes or until fully cooked through.
