Ingredients
Meatloaf
- 2 lbs. ground beef (90/10 mix)
- 3/4 cup unflavored breadcrumbs (dry)
- 3/4 cup beef broth
- 1 envelope Lipton Beefy Onion Soup mix (dry, unprepared)
- 2 eggs
- 1/3 cup ketchup
- 8 slices Swiss cheese
Caramelized Onions
- 1 1/2 cups yellow onions, sliced (about 2 medium onions)
- 2 Tablespoons olive oil
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and lightly spray it with non-stick cooking spray to prevent sticking. Set aside.
- Mix Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, unflavored breadcrumbs, beef broth, Lipton Beefy Onion Soup mix (dry), eggs, and ketchup. Use a rubber scraper or spatula to mix all ingredients together until well incorporated. The mixture will be thick and sticky.
- Shape the Meatloaf: Transfer the meat mixture onto the prepared baking sheet. Shape it into a loaf approximately 10 inches long and 4 inches wide. Precise measurements are not critical here.
- Bake the Meatloaf: Place the meatloaf in the preheated oven and bake uncovered for 60 minutes or until fully cooked through.
- Prepare Caramelized Onions: While the meatloaf is baking, heat olive oil in a medium skillet over medium-high heat. Add the sliced yellow onions and sauté for 6 to 8 minutes, stirring frequently, until the onions become soft, translucent, and lightly browned. Remove from heat and cover to keep warm.
- Add Cheese and Finish Baking: Once the meatloaf has finished its initial baking, carefully remove it from the oven. Evenly layer the 8 slices of Swiss cheese over the top of the meatloaf. Return the meatloaf to the oven for an additional 5 minutes to allow the cheese to melt completely.
- Top and Serve: Remove the meatloaf from the oven and top it generously with the caramelized onions. Slice, serve, and enjoy this savory, flavorful meatloaf.
Notes
- Use ground beef with a 90/10 lean-to-fat ratio for best texture and flavor.
- If you prefer a thicker crust on the meatloaf, bake uncovered as directed.
- Caramelizing onions adds sweetness and depth—don’t skip this step!
- Swiss cheese melts beautifully, but you can substitute with mozzarella or provolone if preferred.
- Let the meatloaf rest for 5-10 minutes after baking before slicing to retain juices.
