Instructions

  1. Cook the shrimp: Bring a pot of water to a boil. Add the peeled and deveined shrimp and cook for 2 to 3 minutes until they turn pink and are cooked through.
  2. Prepare an ice water bath: While the shrimp cook, fill a bowl with ice water. Using a skimmer, transfer the cooked shrimp into the ice water to quickly chill and stop the cooking process. Let them cool for 3 minutes, then drain well in a colander.
  3. Assemble the salad: In a large mixing bowl, combine the cooled shrimp, diced mango, diced avocado, sliced celery, diced red bell pepper, chopped cilantro, and finely chopped red onion.
  4. Make the dressing: In a small bowl, whisk together the extra virgin olive oil, fresh lime juice, honey, minced garlic, and season with kosher salt and ground black pepper to taste.
  5. Toss the salad with dressing: Pour the dressing over the salad ingredients and gently toss everything together until well combined and evenly coated.
