Description

These Marinated Feta Cubes are a flavorful appetizer featuring bite-sized feta cheese cubes soaked in a vibrant marinade of olive oil, honey, garlic, fresh herbs, and chili flakes. Perfect for serving at parties or as a zesty salad topping, the recipe requires minimal prep and benefits from a few hours of marination to develop its rich, savory taste.

Ingredients

Marinade

  • 1/2 cup extra virgin olive oil
  • 2 teaspoons honey
  • 3 cloves garlic, finely diced
  • 1 tablespoon chives, finely diced
  • 2 teaspoons fresh oregano, chopped
  • 1 teaspoon chilli flakes

Feta

  • 2 blocks feta cheese, cut into small bite-sized cubes

Instructions

  1. Whisk marinade: In a small mixing bowl, whisk together the extra virgin olive oil, honey, finely diced garlic, chives, fresh oregano, and chili flakes until well combined to create the flavorful marinade.
  2. Prepare feta: Pat the feta blocks dry using paper towels to remove excess moisture, then dice into small bite-sized cubes for easy marinating and serving.
  3. Marinate feta: Spread a couple of spoonfuls of the prepared marinade in a large shallow dish. Add the cubed feta on top, then pour over the remaining marinade, ensuring all pieces are evenly coated.
  4. Refrigerate: Cover and refrigerate the marinated feta for at least 2 hours, ideally 4 hours, to allow the flavors to meld. Occasionally baste or gently toss the cubes if possible for even marination.
  5. Bring to room temperature: Before serving, bring the marinated feta close to room temperature to loosen the marinade and enhance the flavors for a more enjoyable eating experience.

Notes

  • Use good quality extra virgin olive oil for the best flavor.
  • Adjust the chili flakes quantity based on your preferred spice level.
  • Marinate for longer than 2 hours if possible to improve taste and tenderness.
  • Serve with crusty bread or crackers as an appetizer or alongside salads.
  • Store leftovers in the refrigerator and consume within 3 days for freshness.
