Ingredients

Marinade

  • 1/2 cup extra-virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 3 Tbsp chopped parsley
  • 1 Tbsp chopped basil
  • 1 Tbsp chopped thyme
  • 1/4 tsp red pepper flakes (adjust for spice preference)
  • 1/4 tsp salt
  • 1/4 tsp pepper

Mozzarella

  • 8 oz. mozzarella balls (ciliegine preferred, or pearls/bocconcini), drained


Instructions

  1. Prepare the Marinade: In a large bowl, combine the extra-virgin olive oil with thinly sliced garlic, chopped parsley, basil, thyme, red pepper flakes, salt, and pepper. Mix thoroughly to blend the flavors.
  2. Marinate the Cheese: Add the drained mozzarella balls to the bowl and gently stir to fully coat each ball in the herb and oil mixture. To enhance flavor penetration, let them marinate uncovered at room temperature for at least one hour before serving.
  3. Storage for Later Use: If not serving within an hour, transfer the marinated mozzarella balls into an airtight container or jar and refrigerate. Keep in mind the olive oil may solidify when chilled.
  4. Serving from Fridge: Remove the marinated mozzarella from the refrigerator about 20 minutes before serving to allow the olive oil to return to liquid form. Stir well before serving to evenly redistribute the marinade.
  5. Shelf Life: When stored properly in an airtight container in the fridge, these marinated mozzarella balls remain fresh and flavorful for up to one week.

Notes

  • Choose ciliegine mozzarella balls for the best texture, but pearls or bocconcini work well too.
